THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- Lightly coat a medium skillet with cooking spray and heat over medium-high. Add onion and garlic and cook until onion softens, about 5 minutes.
- Add ground turkey and cook, stirring to break up the meat. Cook until no longer pink, about 5 minutes.
- Stir in remaining ingredients (except dinner rolls!). Cook until bubbly and slightly thickened. Divide evenly over dinner rolls and serve hot.

I grew up eating sloppy joe sandwiches and can't get enough of the messy deliciousness. Even though I eat meatless once or twice a week, I still enjoy the rich and hearty flavor of meat. I use tempeh here, which is a fermented soy product that is high in protein and has a savory, nutty, earthy flavor. - In a large skillet, heat oil over medium-high heat. Add onion and green pepper; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Crumble tempeh into skillet; cook and stir for 5 minutes. Add tomato sauces, brown sugar, soy sauce and seasonings; cook and stir over medium heat until thickened, 10-15 minutes. Serve on buns.

SLOPPY JANES
Steps:
- Spray a large skillet with nonstick spray and bring it to medium-high heat on the stove. Add turkey and sprinkle with steak seasoning and salt. Cook and crumble until it's mostly cooked, about 8 minutes.
- Reduce the heat to medium. Add onion, bell pepper, Worcestershire sauce, and vinegar. Mix it well and continue to cook and crumble until the meat is fully cooked, about 5 minutes.
- Reduce the heat to low. Add tomato sauces, tomato paste, and sugar. Stir well. Stirring occasionally, cook until it's hot, about 5 minutes.
- Toast the buns, if desired. Evenly distribute the mixture among the bottom buns and then finish off with the tops of the buns. Enjoy!
HEALTHY SLOPPY JOES WITH LENTILS
This version of Sloppy Joes ups the nutrition ante by swapping the meat for lentils, and adding in extra veggies. Adjust this recipe to how you prefer your Sloppy Joes--make them sweeter with additional molasses, spicier with additional chili powder, or tangier with additional mustard. Serve warm, with your favorite rolls or buns, and top with sliced red onion and fresh spinach or lettuce, if desired.
