SLOPPY JOE SHIRRED EGGS WITH SPINACH
Swap out the sugar in standard sloppy joes for the carrots and caramelized onions in this turkey version, then nestle in eggs on mounds of garlicky spinach.

- Preheat your oven to 400°F. Combine the carrot, tomatoes plus their juice, and 1 cup water in a blender. Blitz till it's as smooth as your blender allows.
- In an ovenproof 12-inch sauté pan or skillet set over medium heat, cook 1 tablespoon of the olive oil and the minced garlic. Watch for the garlic to start sizzling, then stir in the spinach and ½ teaspoon of the salt. Continue stirring for a minute, until all the spinach is wilted. Remove it from the pan and set aside.
- Add the final tablespoon olive oil to the pan, raise the heat to medium, and add the turkey plus 1 teaspoon salt. Using a wooden spoon or spatula, break the turkey up into small morsels as it browns. When you have browned turkey, add the cumin, paprika, and black pepper. Stir to incorporate, toasting the spices for about 30 seconds.
- Add the carrot-tomato mixture, the R-Rated Onions, vinegar, and ½ teaspoon salt. Let this cook for about 15 minutes, uncovered, stirring occasionally. You may need to lower the heat to prevent Joe from sticking or splattering. When the ragout is done it will be thick and juicy. If it seems too dry, stir in a little water. Taste the ragout for seasoning and adjust as you like.
- Turn the heat off and make four indentions in the ragout. Divide the spinach and put equal amounts in each indentation. Top each section of spinach with a cracked egg. Sprinkle the eggs with the remaining 1 teaspoon salt.
- Slide the skillet onto the middle rack of your preheated oven. Bake for 10 to 12 minutes, until the whites are set and the yolks are slightly runny.
- To serve, scatter ribbons of Parmigiano Reggiano or another hard cheese over the top. If bread is your thing, this is great with toast.
SLOPPY JOE EGG ROLLS RECIPE BY TASTY

- Heat 3 quarts (2.8 L) of oil in a large pot until it reaches 350°F (180°C). Set a wire rack over a baking sheet.
- Heat the remaining tablespoon of vegetable oil in a large cast-iron skillet over high heat. Add the ground beef, 1 teaspoon of salt, and 1 teaspoon of pepper, and cook for 10 minutes, or until browned. Remove the beef from the pan, leaving the drippings behind, and set aside.
- In the same pan, cook the onion for 5 minutes, or until softened.
- Push the onions to one side of the pan, and add the green pepper to the other side. Cook for 5 minutes, or until softened.
- Return the ground beef to the pan. Add the remaining teaspoon of salt, remaining teaspoon of pepper, the oregano, brown sugar, garlic, Worcestershire sauce, and ketchup, and stir to combine. Add the tomato sauce and stir well.
- Lay an egg roll wrapper on a clean surface. Brush a ½ inch (1 cm) border all around with egg wash.
- Place two tablespoon filling of sloppy joe filling in the center of the egg roll wrapper. Fold one corner of the wrapper over the filling. Fold the sides over the folded corner. Continue rolling to seal the egg roll. Repeat with the rest of the wrappers and filling.
- Fry the egg rolls, about 2 at a time, for about 2 minutes on each side, until evenly golden brown. Set the fried egg rolls on the wire rack to drain, and let cool for 10 minutes.
- Serve warm with cheese dip.

This is something that my Nee used to cook as a quick side dish. Don't be afraid, it really is a good dish despite the weird combination of ingredients.

Steps:
- In a large skillet, saute your onion in the butter until translucent.
- Dump the frozen spinach into the skillet with the onion and add the 1/4 cup water. Cover and cook on medium heat, stirring occasionally to keep the spinach from sticking.
- Once the spinach is wilted and appears done, pour in the 2 eggs which have been whisked well.
- Stir continually until the egg turns white and the spinach appears "dry", but make sure not to overcook.
- Sprinkle with seasoned salt (to taste) immediately before serving.
