SLOW COOKER BABY BACK RIBS

These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

Steps:

  • Season ribs with salt and pepper.
  • Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
  • Cook on High for 4 hours (or Low for 8 hours).
  • Preheat oven to 375 degrees F (190 degrees C).
  • Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
  • Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.

  • Generously season the ribs with salt and pepper, then rub with the vegetable oil and sprinkle with the chile powder, pressing to adhere. Whisk 1/3 cup barbecue sauce, the vinegar, ginger and garlic in a 6- to 8-quart slow cooker. Add the ribs and turn to coat in the sauce. Cover and cook on low until the ribs are tender, 7 hours.
  • Preheat the broiler. Transfer the ribs to a rimmed baking sheet. Remove 1/4 cup of the cooking liquid to a small bowl and whisk in the remaining 1/3 cup barbecue sauce, the pineapple preserves and ketchup.
  • Brush the pineapple sauce all over the ribs to coat completely; arrange bone-side down. Broil until the sauce is sticky and the ribs are lightly charred in spots, 3 to 5 minutes. Top with the scallions.

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Steps:

  • Preheat a grill for cooking over low heat.
  • Remove the membrane from the bone sides of the ribs. Rub both sides of the ribs with the steak seasoning.
  • Lay 1 rack of the ribs over a large sheet of aluminum foil. Fold up the sides and pour in half of the beer. Seal the foil, leaving enough room for the packet to fill with steam as it cooks. Repeat with the remaining ribs and beer. Arrange the foil packets on the grill and cook until the meat is tender, about 1 hour 30 minutes.
  • Remove the packets from the heat (leave the grill on) and let cool for 5 minutes. Pour about 1/2 cup total of the juices from the foil packets into a small saucepan and stir in the barbecue sauce. Warm the saucepan on the grill.
  • Cut the cooked ribs into portions and reheat on the grill until hot and well-browned on both sides, brushing with the barbecue sauce mixture as they cook. Serve the ribs with the remaining sauce on the side.

  • Trim excess fat from ribs. Combine dry ingredients and rub over the surface of the ribs. Place ribs in slow cooker or Crock-Pot standing on their edge with the meaty side out. Cook for about 8 hours. Remove ribs from slow cooker and brush with barbecue sauce.
  • My Note: THE ONLY THING I DID DIFFERENTLY WAS THAT I TURNED OFF THE SLOW COOKER AND I REMOVED THE RIBS. I PLACED THEM ONTO A FLAT TRAY LINED WITH FOIL, WITH MINIMAL JUICE FROM THE SLOW COOKER.   • First, we cooked for 6.5 hours on low, and the ribs came out moist and falling off the bone tender. Any longer, and they would have not have held together. Second, we also coated lightly in BBQ sauce when they came out, and then put them under the broiler for 7 minutes. That way, the outside was crispy and BBQ-like, but the inside was moist and so, so, tender. When we make again, we'll take them out after 6 hours, which is plenty on low! My wife said they are the best she's ever had, and my mother-in-law wanted the recipe!

  • Lay out the ribs on a large baking tray.
  • Season evenly with salt, pepper, garlic powder, paprika, and oregano. Rub in on all sides.
  • Pour half the BBQ sauce over the ribs and brush to evenly coat all sides.

  • My Note: The genius of this recipe is the first step - roasting ribs in the oven. This removes fat and liquid that would otherwise cause soupy results in the crockpot. Use any sauce (I like 1 Cup ketchup, 1 Cup Stubb's barbecue sauce, 2 Tablespoons. brown sugar, 1 teaspoon Worcestershire, and Tabasco hot sauce to taste.) The original sauce recipe (which I've tried) isn't sharp or hot enough for our tastes. We use boneless beef chuck country ribs, 2 lbs. or more. Stir once during cooking time so ribs don't stick to sides and burn. To thicken sauce a bit, put the crockpot on High, with the lid ajar, during the last half hour.
  • I didn't care for all the ingredients needed for the results. It tasted similar to what I tend to do for slow cooker ribs. I simplyt seasoned the ribs with garlic salt, onion powder, and black pepper; place in the crock pot and cover the ribs with a half a bottle of KC Masterpiece BBQ sauce. I let the ribs cook on low for about 8-10 hours. Then I place them in the oven on a baking sheet for a half hour so that the sauce caramelizes onto the meat. It works every time!
  • The sauce tastes alot like ketchup. It is not horrible but it is below average to me. I substituted the 2 cup equivalent of my favorite BBQ sauce for the ketchup and they were delicious. I would also recommend rotating the ribs halfway through the cooking process if possible so that all the ribs are equally tender. This just became my favorite slow cooker recipe.
  • These were the most incredible ribs I have ever tasted, in or out of a restaraunt! I followed other reviewers' advice and substituted bbq sauce for the ketchup, (2 cups) and ketchup for the chili sauce.   • Remove the membrane from the ribs. Removing this chewy membrane will make for more tender ribs. Flip the racks over so that the bones are facing up. Pry a finger between the silvery membrane and the ribs to start pulling up the membrane — I like to do this between two of the rib bones. Once you have a piece of membrane pulled up, you should be able to easily pull the whole membrane off.
  • Cut the ribs into 4 rib sections. Flip the ribs back over and cut them into 4 to 5 bone sections with a sharp knife. To do this, carefully hold the rack upright and guide the knife through the meat between the bones. This makes them easier to fit into the slow cooker and portions them into individual servings at the same time.
  • Salt the ribs and coat with mustard. Sprinkle the ribs all over with the salt. It's okay if you have some leftover. Using a pastry brush or your fingertips, brush the ribs on all sides with mustard — this helps the spice rub stick.
