My mom's soup that I remember from childhood. Probably as basic as it gets. Add cheese of choice and croutons, if desired.

Steps:
- Melt butter in a skillet over medium heat. Cook and stir onions in melted butter until clear and browned, 10 to 15 minutes; transfer to a slow cooker. Add beef broth, garlic, salt, and black pepper to the slow cooker.
- Cook on High for 4 hours or on Low for 8 hours.

- Toss onions, butter and sugar in 5- to 6-quart slow cooker. Top with bay leaves and beef.
- Cover and cook on low heat setting 9 to 10 hours or until onions are deep brown.
- Stir in beef consommé, sherry, apple juice and thyme. Increase heat setting to high. Cover and cook 10 minutes or until hot. Remove bay leaves.
- To serve, spoon into ovenproof soup bowls and top each serving with slice of toast and 1/4 cup cheese. If desired, broil with tops 6 inches from heat 3 to 5 minutes or until cheese is bubbly and begins to brown.

- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

This is my all time favorite slow cooker recipe! If you love French Onion Soup, you will love this casserole! Taken from a Pillsbury One-Dish Meals Cookbook.

Steps:
- Cut beef into 6 serving sliced pieces- (instead of this I usually buy two pounds of beef stew meat already cubed).
- Layer half each of beef, mushroom and onion in 3 1/2 to 4-quart slow cooker; repeat layers.
- Pour soup over ingredients in slow cooker.
- Cover, cook on low setting for 8 to 10 hours or until beef is tender and no longer pink.
- Before serving, in medium bowl, combine stuffing mix, contents of seasoning packet, melted margarine and 1/2 cup of liquid from the slow cooker; toss to mix.
- Place stuffing on top of contents in slow cooker.
- Increase heat to high setting.
- Cover; cook an additional 10 minutes or until stuffing is fluffy.
- Sprinkle with cheese (I usually double this and put 8 ounces or 2 cups cheese).

- Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.
- In lined slow cooker, mix onions and margarine.
- Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.

- In a slow cooker, toss the onions with the butter and sugar. Cook, covered, on high heat, until the edges begin to brown, about 90 minutes.
- In a large skillet over medium-high heat, warm the oil until shimmering, about 1 minute. Add the beef and brown, stirring occasionally, 5-7 minutes. Transfer the beef to the slow cooker. Add the sherry to the skillet and scrape up the browned bits. Add the pan juices to the slow cooker along with the broth, Worcertershire sauce, salt, thyme, bay leaf, and pepper to taste. Simmer, covered for 2-1/2 hours on high heat or 7 hours on low.
- Uncover and simmer for 1 hour more, until thick. Remove the bay leaf.
- When ready to serve, turn on the broiler. Ladle the soup into flameproof bowls and divide the cheese over the tops. Place the bowls on a baking sheet and broil until the cheese is melted and bubbling, about 3 minutes. Serve hot.
