SLOW-COOKER CHEDDAR AND HORSERADISH MASHED POTATOES
Making mashed potatoes in a slow cooker not only saves precious stovetop space, but also yields uber-tasty spuds: Since you're not boiling the potatoes in lots of water, you don't lose any of that rich potato-y flavor.

- Toss the potatoes, butter, 1 tablespoon salt and 1/2 teaspoon pepper together in a 6-quart slow cooker. Add 1 cup of water, and cook, covered, on high until the potatoes are tender, about 4 hours. (They may have browned lightly in spots, but that is OK.)
- Add the sour cream and 1 1/2 cups of the warm milk to the potatoes, and smash them with a potato masher until they are mostly smooth. If they need to be thinned out, stir in the remaining 1/2 cup warm milk. Add most the Cheddar and all the horseradish, and stir to combine. Season to taste with salt and pepper. Garnish with the remaining Cheddar and the chives.
SLOW-COOKER MASHED POTATOES

- In crock pot, add 2 cups of water and potatoes.
- Cook on high for 1-2 hours or until potatoes are very soft to touch.
- Water should be almost evaporated and potatoes will mash when gently touched. If you have a lot of water leftover, drain it off. If you have under 1/2 cup, go ahead and leave it. This will help keep your potatoes from over drying while waiting for dinner to be done- so you can make them ahead of time.

This recipe is from Taste of Home magazine. It's become my classic holiday mashed potato recipe. Everyone loves them! I love that I can make them ahead, instead of trying to mash potatoes, make gravy, and carve turkey or roast all at once! I can make a double batch early in the day, toss them into the crockpot, and by the time dinner is served, the potatoes are ready and waiting! I usually skip the Ranch dressing, since I don't think it would taste good with my gravy. Time doesn't include time to peel, cook, and mash potatoes (usually takes me around 30-40 minutes)
