Honey Smacks Brittle image

Steps:

  • Lightly coat a 15 x 10 x 1-inch nonstick baking pan with nonstick cooking spray. Set aside.
  • Combine sugar, corn syrup, and butter in a medium heavy-bottomed saucepan over moderate heat. Bring to a boil, stirring constantly.
  • Immediately remove from heat and quickly stir in the Honey Smacks and nuts and immediately pour the mixture onto the prepared baking pan. You must work quickly, as the mixture will harden.
  • After about 30 seconds, using rubber gloves, take hold of the edge of the candy and, lifting it slightly from the pan, pull it as thin as possible.
  • Brake the candy into irregular pieces. Store tightly covered. Makes 1 dozen pieces.

"A Christmastime treat! This holiday confection is gobbled up quickly by guests, and it is so easy to make. The cool crunch of peppermint with creamy white chocolate is a divine combination."

Steps:

  • Line a large jellyroll pan with heavy-duty foil.
  • Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5-6 minutes. Stir occasionally, until chocolate is melted and smooth.
  • Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks.
  • Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour.
  • Break into pieces by slamming pan on counter.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottom only of 8x4-inch loaf pan with shortening or cooking spray, and place paper baking cup in each of 12 regular-size muffin cups.
  • In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally, until smooth. Place 1 3/4 cups batter into loaf pan. Spoon remaining batter into muffin cups.
  • Bake loaf cake 35 to 40 minutes and cupcakes 18 to 23 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes. For easier handling, refrigerate or freeze loaf cake 30 to 60 minutes or until firm.
  • Trim rounded top off loaf cake. Cut cake in half crosswise. Place half of loaf cake cut side up on plate. Spread cut side with frosting. Top with remaining half of loaf cake, cut side down.
  • Frost sides and top of cake with frosting. Cut number out of waxed or cooking parchment paper, and place on top of frosting (template can be found under the Tips below). Cover cake with sprinkles, using a cookie sheet with sides to catch loose sprinkles. Gently lift number off cake, and smooth frosting. Use remaining frosting to frost cupcakes.

Steps:

  • To make chili honey, take the honey and place 4 chilies (I roasted them slightly first) and then place in a jar overnight.
  • If you want, you can puree some of the chilies with the garlic for a extra kick.
  • For the Brittle: Line 2 baking sheets with parchment or waxed paper.
  • Combine the water and sugar in a large nonstick heavy-bottomed saucepan over medium-high heat.
  • Stir to dissolve the sugar, 4 to 5 minutes.
  • Add the corn syrup, honey, and salt, and stir constantly and slowly with a wooden spoon until the mixture comes to a gentle boil, about 2 minutes.
  • Continue stirring until the mixture reaches 290°F on a candy thermometer.
  • Remove the pan from the heat.
  • Add the butter, garlic puree, and baking soda and stir until the butter is completely melted, about 1 minute.
  • Pour the mixture onto the baking sheets, being careful as it is very hot, and spread it evenly with a rubber spatula.
  • Let cool completely.
  • Break the brittle into shards.

Sesame Brittle image

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the sesame sees on a large cookie sheet or jelly roll pan and toast them in the oven for 15 minutes.
  • Place the seeds in a 3 quart pan. Add the sugar, corn syrup, 1/3 cup water and margarine to the sesame seeds.
  • Bring to a boil over medium heat, stirring constantly.
  • Once it's come to the boil, continue to cook without stirring until the temperature reaches 270 degrees F on a candy thermometer or until a small amount of the mixture forms a ball when dropped into very cold water. (I don't have a candy thermometer, so I use the ball test.) This can take 15 to 20 minutes or more. The ball should be "plastic" in texture but should hold the ball shape.
  • Grease a jelly roll pan.
  • Stir the baking soda into the sesame seed mixture and pour into the jelly roll pan.
  • Spread the mixture with a metal spatula so it is 1/4 inch thick.
  • Cool completely and then break into pieces.
  • Don't forget to brush your teeth well after munching on these.

Basic Brittle image

Steps:

  • Coat a 12-by-17-inch rimmed baking sheet withcooking spray. Bring sugar and corn syrup to a boil in a medium saucepan, stirring and brushing down sides with a wet pastry brush to prevent sugar crystals from forming, until sugar dissolves. Cook,swirling occasionally, until mixture just starts to turn golden around edge.
  • Stir in mix-ins. Cook, stirring occasionally, until mixture is pale amber, about 8 minutes. Pour onto baking sheet without spreading. Let cool. Break into pieces.
