Steps:

  • Blend together butter, cheese, and yolk in food processor until smooth. Add flour, dried mustard, and salt and pulse until just combined. Transfer dough to a sheet of wax paper and divide into 3 portions (do not clean processor).
  • Return 1 portion to processor, add pepper, and pulse until combined well, then transfer to another sheet of wax paper. Shape into a 7-inch-long log (1 1/2 inches thick), using paper as an aid, then roll up log in paper and twist ends of paper to close. Make 2 more logs on separate sheets of wax paper in same manner, using caraway seeds for second log and nigella seeds for third log (instead of pepper) and cleaning processor in between batches. Chill logs until firm, about 2 hours.
  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with parchment paper.
  • Unwrap 1 log and cut enough thin slices (about 1/8 inch thick) from it to fill baking sheet, arranging slices 1 inch apart. Bake until edges of crackers are golden, 10 to 12 minutes. Transfer on parchment to a rack and cool slightly, about 15 minutes. Make more crackers in batches with remaining dough.
  • Serve crackers warm or at room temperature.

Addictive little cheese crisps with a smokey flavor. Increase the amount of cayenne if you like an extra 'kick"! Great with cocktails or with tomato soup. Originally from a December 1989 issue of Bon Appetit from a "Festive Holiday Menus" section. When preparing the dough for these appetizers, be sure the butter is very soft.

Steps:

  • Using an electric mixer, beat butter and cheese in medium bowl until well blended.
  • Mix flour, cayenne and salt; gradually beat dry ingredients into butter alternately with milk (dough will be soft).
  • Turn dough out into sheet of plastic wrap;shape dough into 8-inch-long log using plastic as aid.
  • Wrap and refrigerate at least 6 hours.
  • (Can be prepared 2 days ahead.).
  • Preheat oven to 400 degrees.
  • Unwrap dough and cut log into 1/8 to 1/4-inch-thick slices.
  • Place 1 inch apart on heavy large cookie sheet.
  • Bake until golden brown, about 15 minutes.
  • Transfer to rack and cool 3 minutes;serve warm or cool completely and store in an airtight container.

Steps:

  • 1. mix shredded cheddar, garlic powder, and chile powder together until the cheese is coated. On a piece of parchment paper placed on a cookie sheet put a spoonful of the mixture on the parchment paper about 2 inches apart they will spread so be sure you just put a spoonful on. Bake in a preheated 350 oven for 5-6 minutes. Let cool on parchment and they will slide off....DO NOT SALT
  • 2. Store in a container in the fridge. You can use all kinds of combinations...Cheddar Jack and Ranch Dressing is good, Mozerella and Oregano or Basil and Garlic, etc. There is not limit. Be sure to use PARCHMENT PAPER because they will stick to foil or the cooking sheet.
