APPLEWOOD SMOKED CHICKEN

Applewood Smoked Chicken image

Steps:

  • In a medium size bowl, mix together the dry ingredients. Rub the seasoning over the both halves of the chicken. Cover the chicken with plastic wrap and place in the refrigerator for 1 hour.
  • Place wood chips in the smoking tray of the grill. If you don't have this option you can make a packet out of aluminum foil and punch a few holes in the top of it with a fork and place directly on the hot coals.
  • Place the chicken on a hot grill over medium-heat with the meat side down. Grill over the wood chips for 1 hour and 20 minutes. Cover, this will keep in the smoke and to prevent oxygen from igniting the smoking wood. After 30 minutes turn the chicken to its opposite side. The juices near the bone should run clear.

Steps:

  • Mix all spices together in small bowl.
  • Using a whole chicken fryer, carefully separate the skin from the meat and sprinkle rub in between the skin & meat.
  • Gently rub the outer skin of the chicken where the spices were placed.
  • Refrigerate the chicken for 1 hour.
  • Roast in oven at 350 degrees until internal temp is 160 degrees.
  • If available, rotisserie chicken for 1 1/4 hours.
  • Serve with corn on the cob and mashed potatoes.

  • Combine all spices in a bowl. Rub the entire chicken with the spice rub, including the cavity, and set aside while you prepare the grill.
  • Set up a charcoal grill for indirect grilling. Throw the soaked wood chips on the hot coals. Place the cover on the grill and adjust the vents holes on the top and bottom to obtain the desired temperature (in this case it should be about 350 degrees F).
  • Place the chicken on the rack of the grill opposite the coals and smoke until the chicken reaches an internal temperature of 160 degrees F, using an instant-read thermometer, about 2 to 2 1/2 hours. Remove from the grill, tent loosely with foil, and let rest 10 minutes before carving.
