HOT SMOKED SALMON & DILL SPAGHETTI
A healthy pasta dish with hot smoked salmon and dill - just five ingredients needed and ready in 30 mins

Steps:
- First prepare the salmon. Flake the salmon into mouthful-sized chunks in a bowl. Bring a large pan of generously salted water to the boil.
- Cook the pasta. Feed the spaghetti into the pan, give it a stir, then cook at a rolling boil, stirring occasionally to keep the strands separate, until the pasta is just tender but with a bite. Check the cooking time on the pack, as it does vary. When the pasta is almost done, throw in the peas.
- Finish the dish: remove any tough stalks from the dill, then chop the fronds fairly roughly. Reserve about 4 tablespoons of the pasta water, then drain the pasta and peas and return them to the pan with the reserved water. Set over a very low heat, then toss in the salmon, dill, crème fraîche, salt and plenty of freshly ground black pepper. Toss everything together lightly and heat through briefly, then serve.

SMOKED SALMON, DILL AND CUCUMBER PASTA SALAD
This is an improvisation on two recipes that I found on 'Zaar (#78690 and #211843). It makes a great summer dinner. You can substitute lowfat or nonfat sour cream for the mayo if you want something a bit lighter.

- Cook pasta according to package directions; drain and chill by running it under cold tap water or, if you have time, putting it in a covered bowl in the refrigerator.
- Combine the yogurt, mayo, dill, salt, pepper, brown sugar, lemon juice and tabasco until well-blended (I use a kitchen mixer for this).
- Toss the dressing with the green onions, cucumber, salmon and pasta, (I use a mixer for this, too) and serve immediately.

CUCUMBER CUPS WITH DILL CREAM AND SMOKED SALMON
Classic combos are classic because the flavors go well together! Dill, cucumber, and smoked fish are combined with a bit of lemon to perk things up. Small pieces of smoked trout would be a good substitute for the salmon in this pretty, easy, no-cook hors d'oeuvre. Cucumber cups can be assembled and kept chilled in an airtight container 1 day ahead of time.

- Trim ends from cucumbers and cut crosswise into 24 (3/4-inch-thick) rounds. Scoop a 1/2-inch-deep depression from one side of each round with a small melon-baller, forming little cups. Drain cucumbers, cup sides down, on paper towels for 15 minutes.
- Beat cream cheese, chopped dill, lemon zest, lemon juice, and black pepper together in a bowl. Spoon 1/2 teaspoon cheese mixture into each cucumber cup. Top each cup with 1 salmon strip and 1 dill sprig.

- In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

- Bring a large pot of water to boil over medium-high heat with a generous pinch of salt. Cook pasta to al dente, according to package directions (generally about 10 minutes). In the last minute of cooking, add the frozen peas directly to the pot with the boiling pasta to defrost. Once the pasta is cooked through and the peas are no longer frozen, drain the pasta in a colander and give it a good rinse under cold water to remove excess starch and help cool the pasta down quicker. Reserve drained pasta and peas to the side.
- In a medium mixing bowl, combine the Greek yogurt, mayo, garlic-infused olive oil (or olive oil + minced garlic cloves), Champagne vinegar, Dijon mustard, lemon juice and zest, chives, dill, Kosher salt, and a few cracks of black pepper to taste with a silicone spatula until well-combined.
- Transfer the cooled pasta and peas to a large bowl and top with the dressing, scraping the bowl with the silicone spatula to empty. Gently toss the dressing with the pasta and peas until well-combined.
- Add the smoked salmon, cucumber, and tomatoes to the bowl and gently toss to combine. Taste for salt and pepper and adjust if needed. Serve immediately or, if preferred, this dish does well prepped up to one day in advance and stored in an air-tight container in the fridge to chill until ready to use.
