FRESH TOMATO CHILI SAUCE

This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

Fresh Tomato Chili Sauce image

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

SMOKED TOMATO CHILI

Smoked tomatoes are cooked on a smoker, or BBQ grill while burning flavored wood chips. The tomatoes I used when creating this recipe were smoked using a combination of mesquite, hickory, oak and cherry wood, but any flavor works. This chili was delicious over a bed of shredded lettuce and broccoli slaw, with crushed tortilla chips, sour cream, and shredded cheese. It was also good over cooked spaghetti noodles (what we call Cincinnati style), and don't hesitate to try it with a simple side of corn bread.

Steps:

  • Brown beef, onion, green pepper, and garlic in dutch oven, or other large pan, over medium-high heat until meat is cooked through. Drain.
  • Add the broth, beans, tomatoes, wine, Worcestershire, brown sugar, sea salt, cumin, and chili powder. Stir well.
  • Cover and reduce heat to low. Simmer for 30-45 minutes, stirring occasionally.
  • If it's too thick, add more broth; if it's too thin, remove lid and simmer uncovered until your desired consistency is reached.

3 garlic cloves, minced
1/2 cup beef broth
2 (15 1/2 ounce) cans kidney beans, drained
2 smoked tomatoes, diced
3 fresh tomatoes, diced (or one 15 oz can diced tomatoes)
1/4 cup red wine (adds great depth of flavor, substitute with additional broth, if desired.) (optional)
1/2 teaspoon Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon sea salt
1/4 teaspoon ground cumin
2 tablespoons chili powder
sour cream (optional)
tortilla chips (optional)
shredded cheese (optional)

  • Preheat the smoker. Preheat your grill or smoker to 225 degrees F using your favorite hardwood. I recommend oak for this recipe.
  • Prep the veggies and steak. While your grill preheats, prepare your meat and vegetables for smoking. Lay a large piece of aluminum foil on a baking sheet. Evenly spread the onions, peppers, and garlic across the foil and drizzle with the olive oil. Set an elevated cooling rack over the vegetables and place the tri tip on the rack.
  • Make the seasoning. In a mixing bowl, combine all of the ingredients for the chili seasoning spice blend. Sprinkle the rub on all sides of the tri tip and sprinkle any remaining rub over the vegetables on the sheet pan.
  • Smoke the meat and vegetables. Set the baking pan on the grate of your smoker, close the lid and smoke the veggies and meat at 225 degrees F for about two hours.
