SWEET AND SMOKY BAKED BEANS

Steps:
- In a heavy pot, cook the bacon over medium heat to render the fat, about 5 minutes. Discard all but 2 tablespoons fat.
- Add the onion, pepper, and garlic and cook until the vegetables are soft, about 5 minutes. Stir in the beans, molasses, barbecue sauce, ketchup, sugar, Worcestershire sauce, mustards, vinegar, and liquid smoke. Simmer the beans, uncovered, until rich and thickly flavored, 10 to 15 minutes, stirring with a wooden spoon. Alternatively, place the baked beans in a deep baking dish and bake in a 350 degree oven for about 30 minutes. Add salt, pepper, or any other ingredient to taste.
SMOKIN' BAKED BEANS
You can sprinkle grated cheddar cheese on top towards the end of baking. If you prefer a sweeter taste, then add in more brown sugar to taste. To make this into a main dish throw in some cooked ground beef or even some tiny meatballs. Can be made in a crockpot also

Steps:
- Set oven to 350 degrees.
- In a large skillet cook bacon until crisp; cool and chop finely.
- Transfer about 3 tablespoon bacon grease to a large bowl.
- Add in onion and the next 8 ingredients (7 ingredients if omitting garlic) to the bowl and mix well to combine.
- Add in chopped chipotle chilies, or chipotle powder (to taste) mix to combine.
- Stir in beans.
- Transfer to a 13 x 9-inch greased baking dish.
- Bake uncovered for about 1 hour, or until mixture thickens.
- Cool 10 minutes before serving.

Steps:
- Pre-heat oven to 350 degrees.
- Gently mix all ingredients in an oven-safe bean pot.
- Bake at 350 degrees for 1 1/2 hours.
- Serve with any bbq or grilled meat, along with chilled coleslaw and some french fries.
- Have extra warmed BBQ sauce on hand at the table, along with lots of napkins or wet-wipes.

- For a Big Green Egg or Kamado type grill, soak one cup of wood chips in water for one-hour. Light the charcoal and when it comes up to 250 degrees F., scatter the drained wood chips over the fire. Add the grill grate, and the baked beans and close the lid. You do not need to use the plate setter for this recipe.
- For any other type of grill or smoker, follow the manufacturer's directions to prepare it for smoking and preheat it to 250 degrees F.
- While your grill or smoker preheats, place the bacon in a cold 12-inch, cast-iron skillet on the stove over medium heat. Pan-fry for about 10 minutes, or until the bacon is golden-brown and crispy. Remove the bacon from the pan and drain it on paper towels. Roughly chop and set aside.
- Add the chopped onions and peppers to the bacon grease in the pan and cook until the onions are translucent, which should take six to seven minutes.

- Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
- In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
- Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
- SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.
