A secret ingredient, no-bean chili courtesy of the Official Chili Cookbook. Don't worry about the alcohol...it cooks out, leaving only flavor. Cornmeal may be substituted for the corn flour (masa), if unavailable.

Kentucky Chili image

Steps:

  • Brown meat, a handful at a time in oil in a large frying pan.
  • Transfer to a Dutch oven or stockpot, add bourbon, beer and tomato paste.
  • Cover and let simmer 20 minutes.
  • Add all remaining ingredients, except the corn flour.
  • Stir, cover and let simmer for two hours, stirring frequently.
  • Combine two cups of the liquid to the corn flour to make a smooth paste.
  • Slowly add the paste into the meat mixture to thicken.
  • Add additional water if mixture is too thick for your taste.

SMOKY KENTUCKY CHILI

A uniquely Kentucky take on what is in my opinion the best winter recipe. If you can't find bourbon-smoked spices, you can substitute any kind of smoked spices. The bourbon barrel aging process adds a lovely deep almost woodsy flavor that complements the spicy flavor of the chili.

Smoky Kentucky Chili image

Steps:

  • In a large nonstick saute pan, brown the beef and turkey. Season with smoked salt and smoked pepper. Drain and add to a large pot or slow cooker insert.
  • In the same pan, toast the garlic with bourbon-smoked chili powder, chipotle chili powder, cumin, oregano, coriander, smoked paprika, and turmeric until fragrant. Add to pot or slow cooker insert and stir to combine with meat mixture. Add beer, beef stock, crushed tomatoes, black beans, pinto beans, Worcestershire sauce, and chipotle pepper sauce. Stir to combine.
  • Simmer on low in large pot or cook in slow cooker on low for at least 2 hours, longer if possible. Make sure to taste the chili before serving and adjust the seasonings as necessary.
  • Serve chili with sour cream, shredded cheddar cheese, diced onions, tortilla strips, or any other toppings of your choice.

Smoked Chicken Chili image

Steps:

  • Heat the canola oil in a large pot over medium-low heat. Add the garlic, onions and poblanos and cook for about 10 minutes or until soft. Add the chili powder and continue to cook for approximately 3 minutes, stirring frequently. Add the heavy cream, chicken stock, hominy and shredded chicken thighs. Bring to a simmer, then reduce the heat to the lowest possible setting and cook for 45 minutes.
  • To finish, add the white beans and masa harina. Bring back to a simmer to thicken, stirring frequently. Season with kosher salt. If desired, adjust the consistency with either more chicken stock or masa harina.
  • Serve with fontina cheese, tortilla chips, sour cream and lime wedges.

Steps:

  • Heat a large Dutch oven over medium-high heat. Add 2 tablespoons of the oil to the hot pan. Season the pork and beef with 1/2 teaspoon of the salt. Working in 2 batches, brown the meat on all sides; this will take about 7 minutes per batch. Remove the browned meat to a plate and continue with the next batch.
  • When all the meat is browned and removed, add the remaining tablespoon of oil to the pan along with the garlic, onion and pepper. Cook, stirring often, for about 3 minutes. Season the vegetables with the chile powder, cumin, chipotle, coriander and 1 teaspoon of salt. Continue to cook the vegetables until the spices are fragrant and the vegetables are soft, an additional 2 minutes. Stir in the diced tomatoes and kidney beans along with 3 cups of water. Add the seared meat and the remaining 1/2 teaspoon salt. Reduce the heat to medium low, cover and simmer until the meat is tender and the chili has thickened slightly, about 1 hour. Stir in the bourbon, espresso and agave and turn off the heat.
  • Serve garnished with shredded Cheddar cheese and a dollop of sour cream if desired.

Smoky Chorizo Chili image

Steps:

  • Heat the olive oil in a large Dutch oven over medium heat. Crumble in the chorizo. Sprinkle with salt and pepper. Cook, breaking up the chorizo with a wooden spoon, until browned, about 3 minutes. Add the red onion and bell peppers and cook until they begin to soften, 3 to 4 minutes. Add the garlic, jalapeno, ancho powder, cumin, smoked paprika and oregano. Cook and stir to coat the meat and vegetables in the spices, about 1 minute.
  • Add the tomatoes, beef broth and 2 cups water. Bring to a simmer over medium-low heat, then stir in the black beans and butternut squash. Simmer, uncovered, until the chili is thick and flavorful and the veggies are tender, 30 to 45 minutes.
  • Serve the chili with bowls of the toppings on the side for passing at the table.

Steps:

  • Heat 1 tablespoon oil in a Dutch oven on medium until hot. Brown beef in batches and remove from Dutch oven. Season with salt.
  • Heat remaining 1 tablespoon oil in same pot on medium. Add beef, tomatoes, beer, adobo sauce and chipotle peppers; bring to boil. Reduce heat; cover tightly and simmer 1 1/2 to 1 3/4 hours or until beef is fork-tender.
  • Stir in beans and masa harina; return to boil. Reduce heat; simmer 1 to 2 minutes, or until slightly thickened.
  • Serve chili with a dab of sour cream on top of each serving.
  • Hint: You can substitute 3 tablespoons flour mixed with 1/2 cup water for the masa harina.

  • Remove the stems from the chillies, then tip onto a sheet of foil with the garlic cloves, a drizzle of olive oil, caster sugar and some salt. Lift the sides of the foil up and scrunch to close.
  • Grill on the barbecue (or roast at 160C/140C fan/gas 3) for 30 mins until the garlic is soft. Tip into a large pestle and mortar or food processor with 1 tbsp olive oil, and crush or blitz to a chunky sauce. Will keep in the fridge for up to two days.

  • Heat a large nonstick skillet over medium-high heat.
  • Coat pan with cooking spray.
  • Add onions and garlic to pan; saute 5 minutes. Add chiles; cook 2 minutes. Add broth and bring to a boil.
  • Cover, reduce heat and simmer 20 minutes or until chiles are tender. Cool slightly.
  • Place half of the chile mixture in a blender.
  • Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid spills). Blend until smooth.
  • Pour into a medium bowl and repeat procedure with remaining chile mixture.
  • Heat 1 1/2 tsp oil in a Dutch oven over medium-high heat. Add beef and cook 7 minutes or until browned. Remove from pan.
  • Heat remaining 1 1/2 tsp oil in pan. Add pork and cook 7 minutes or until browned.
  • Add chile mixture and beef to pan.
  • Stir in tomato puree and remaining ingredients except beans; bring to a boil.
  • Partially cover, reduce heat and simmer 1 hour or until tender, stirring occasionally.
  • Stir in beans; cook 15 minutes.
  • Garnish with sour cream and chopped green onions, if desired.

Steps:

  • Heat the oil in a casserole or shallow saucepan over a medium heat, then fry the beef for about 10 mins until any fat has been released and the beef has started to brown. Add the onion and fry for another 8-10 mins until the onions have softened and started to brown slightly. Add the garlic and stir for another minute.
  • Stir in the cumin seeds, ground coriander, oregano and a good grinding of black pepper, and continue to fry the mixture for a few minutes until fragrant. Add the vinegar, then the chipotle and tomato pastes, and stir everything together. Tip in the tomatoes and a can of water, then add the yeast extract and crumble in the stock cube. Stir well and bring the mixture to a simmer. Cook for 20 mins, stirring occasionally.
  • When the chilli has thickened, tip in the beans and half the liquid from the can. Simmer for 20 mins more, taste for seasoning, then serve with rice, and top with the soured cream, jalapeños, coriander leaves and onion.

  • Wash beans thoroughly, soak overnight, and drain.
  • Place beans in slow cooker. Add water and next 7 ingredients.
  • Cook on LOW for 6 hours, till beans are tender.
  • Brown the meat well in a frying pan for 8 minutes. Stir in tomato paste and cook 1 minute. Then add the steak, peppers, corn, tomatoes, and salt to the beans, and cook an additional 30 minutes. If desired, add more chipotle chili powder for more heat.
