PEANUT BUTTER NANAIMO BAR (CANADA)
There are a number of stories as to where this cookie came from. It's thought to be native to Nanaimo, British Columbia (hence the name), and it gained widespread popularity in the 1950s. Whatever its origins, we loved it. We added the twist of peanut butter to make a simple, delicious, no-bake bar cookie that's super kid-friendly and freezes well.

Steps:
- Line an 8 by 8-inch baking pan or casserole with aluminum foil, with long flaps hanging over each edge.
- For the cookie: Put the butter in a heatproof medium bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer over medium-low heat. Set the bowl over, but not touching, the water. Once the butter is melted, add the sugar and cocoa, and stir to combine. Add the egg and cook, stirring constantly with a whisk, until warm to the touch and slightly thickened (it should be about the consistency of hot fudge), about 6 minutes. Remove from the heat and stir in graham crumbs, coconut and nuts. Press the dough firmly into the prepared pan. (Save the pan of water for melting the chocolate.)
- For the filling: Beat the butter, peanut butter and confectioners' sugar together in a medium bowl with an electric mixer until light. Spread over the cookie and freeze while you prepare the chocolate glaze.
- For the glaze: Put the chocolate and butter in a medium heatproof bowl, and set over the barely simmering water. Stir occasionally until melted and smooth. Remove from the heat and let cool slightly. (Alternatively, put the chocolate and butter in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue to heat until completely melted, about 1 minute more.). When cool but still runny, pour the chocolate layer over the chilled peanut butter layer and carefully smooth out with an offset spatula. Freeze 30 minutes.
- To serve, remove from the freezer and let sit at room temperature for 5 minutes. Pull out of the pan using the foil flaps and transfer to a cutting board. Cut into 1-inch squares with a sharp knife. Serve cool or at room temperature.
SUNNY'S CRUNCHY PEANUT BUTTER S'MORE BITES
Steps:
- In a large bowl, add the peanut butter, butter and powdered sugar and beat with a whisk or electric beater until smooth. Using a teaspoon measure, scoop the mixture and form into balls, then press into a coin shape the diameter of a quarter. Refrigerate to set up dough cookies, about 30 minutes.
- To make bites, dip peanut butter coins in melted chocolate then toss in graham cracker crumbs until coated, double dip and double coat if you feel dangerous. Arrange the coated coins on a wire rack and refrigerate for about 30 more minutes to set. Add the marshmallow fluff to a pastry bag fitted with a star tip. Remove the coins from the refrigerator and squeeze about 1 teaspoon of marshmallow fluff into the center of half of the coins. If you don't have a pastry bag, use a plastic bag, fill it with fluff and cut 1 corner off and dollop that way. Then top each half with another coin to make a sandwich and place return to the refrigerator to set, about 1 hour.
- Options: chop coconut flakes and add them to the graham cracker crumbs to use for coating.
- Add puffed rice cereal into the peanut butter, butter and powdered sugar for a bit more texture and crunch.
BASIC GRILLED PANINI
This is a great grilled sandwich! Panini get their character or distinct look from the grill marks on the sandwich. I serve it with soup or even salad. This is the basic recipe. Enjoy!

PEANUT BUTTER BALLS
My mom helped me post this recipe. These candies are like Reese's Peanut Butter Cups and are fun for kids to make because you don't have to cook them. My mom and I made these together.

PEANUT BUTTER AND BANANA PANINI STICKS
Steps:
- Preheat a panini maker to medium heat.
- Spread the peanut butter on one side of each slice of bread. Arrange the banana slices on top of the peanut butter on one of the slices. Top with the other slice of bread to make a sandwich. Butter the outside of the sandwich on both sides.
- Put the sandwich in the panini press and close (do not press on the panini maker or the filling will leak out). Cook according to the panini maker instructions until the bread is lightly browned and crispy. Let cool for 3 to 4 minutes, then slice into sticks and serve.
SMOKED ITALIAN PANINI
One day while watching food network I saw a panini made on Paula's Party and it looked absolutely delicious. I searched the recipe and realized I wouldn't be able to find much of the ingredients here. So I decided to try and create my own so to speak with what I could find. A few tries later I settled on this one and I am done searching! It is fabulous! A great blend of flavors! I am not sure how easy it would be to find those meats singularly but I bought them in a gourmet pack in the deli section. I had to name the meats "sausage" so that recipe zaar would recognize them, though I don't know that they are actually a sausage or not. Its more like a salami or pepperoni.

Steps:
- Meat should be very thinly sliced (I use the Daniele brand 'Italian Blend Gourmet Pack' found at a local grocer). Fry each piece for a short time, just long enough to heat them up a bit and release the juices.
- Pat down with a paper towel to remove excess grease.
- Cut the rolls in half and spray olive oil cooking spray on all insides. Then sprinkle italian seasoning over each piece.
- Arrange bread on baking sheet and put under broiler for 4-5 minutes until browned well.
- Build Panini in the following order: Bread, baby romaine, couple of rings of red onion, the first three meats, couple slices of smoked gouda, prosciutto, peppers, 1/2 teaspoons balsamic vinegar, 1/2 teaspoons olive oil drizzled over top and top the entire thing off with some shaved parmesan.
- Enjoy!
THE BEST PEANUT BUTTER PIE
I am a connoisseur of peanut butter pies. Some are too fluffy, some are too dense. This is just right. I found this one in a Smucker's (R) ad and I've never had better, especially now that I've made a couple small changes. Reserve a spot at the gym, because you'll need it after you make this! (And trust me, licking the spoon is reason enough to make it.)

- Reserving 2 Tbs. of hot fudge topping, place the remainder of the topping into a microwave safe container and microwave on high for 1 minute. Stir.
- Spread the hotfudge topping over the peanut butter layer.
- Refrigerate until serving time.
- Just before serving, spread the remaining whipped topping over the hor fudge layer, being careful not to mix the layers.
- Place 2 Tbs. of hot fudge topping (room temperature) in a small baggie and knead for a few seconds. Cut a tiny hole in the corner of the baggie and drizzle over the pie to make it pretty.
EASY BLINI (RUSSIAN PANCAKE)
I love these bite-sized pancakes because they make perfect appetizers. Top blini with smoked salmon, creme fraiche, or even caviar. Add a sprig of dill and they are sure to impress. My children also love eating these plain too!

29 PANINI RECIPES THAT WILL TOTALLY MAKE YOU MELT
From purewow.com
- Prosciutto, Blue Cheese and Candied Pecan Panini. The saltiness of the prosciutto and blue cheese blends with the sweetness of the candied pecans, resulting in mouth-watering harmony.
- Mozzarella and Feta Pita Grilled Cheese. OK, not all grilled cheese sandwiches are paninis, but the prominent grill marks on this sammy make it fit both categories.
- Cuban Pork Sandwich. Traditionally, Cuban sandwiches are cooked on a flat plancha, according to Serious Eats, but if you have a ridged panini press, you can look forward to some delicious crispiness.
- Nutella Bacon French Toast Panini. I’m sorry, we just hallucinated…what? Nutella, bacon and French toast—three brunch superheroes—unite in this incredible sweet and salty panini.
- Italian Panini Sandwiches. There are very few combinations out there that surpass that of mozzarella, tomato and basil. And although these Italian sandwiches radiate elegance, they’re seriously simple.
- Cheesy Pizza Panini. Your favorite slice meets a drool-worthy sandwich in this epic crossover. Described as “melty and gooey,” all you’ll need aside from the bread is pizza sauce, cheese, pepperoni and butter.
- Spicy Chicken Panini. Forget waiting in a drive-thru line for one of the many overrated fast food spicy chicken sandwiches. Whitney Bond’s Spicy Chicken Panini is bursting with flavor, calling for King’s Hawaiian Big Island Lava Sauce (available online), pepper jack cheese, blue cheese, carrots, green onions and celery.
- Eggplant Panini with Sun-Dried Tomatoes. Whether you’re fully vegetarian or if you’re simply looking to observe the occasional meatless Monday, these veggie-filled paninis combine salty cheese with acidic balsamic and sweet sun-dried tomatoes.
- Fried Chicken Club Sandwich Panini. Although many paninis on this list can be executed in just a few steps, this one is slightly more complex, though it does have one of the bigger payouts.
- Grilled Pesto Panini Sandwiches. Pesto is easily one of the greatest panini toppings out there—that herby flavor adds dimension, preventing a cheesy sandwich from feeling one-note.
