Broccoli Soup image

Steps:

  • Melt 4 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli, onion, carrot, salt and pepper and saute until onion is translucent, about 6 minutes. Add the flour and cook for 1 minute, until the flour reaches a blonde color. Add stock and bring to boil.
  • Simmer uncovered until broccoli is tender, about 15 minutes. Pour in cream. With an immersion blender, puree the soup. Add salt and pepper, to taste, and then replace the lid back on the pot. Serve hot with Homemade Croutons.
  • Preheat oven to 400 degrees F.
  • Cut bread into cubes and place in a large bowl. Drizzle cubes with olive oil, salt, pepper and red pepper flakes. Mix well.
  • Spread seasoned bread onto a sheet pan and bake for about 15 minutes.

Steps:

  • Heat olive oil in a large saucepan, and saute onion and garlic until tender. Mix in broccoli, potato, and chicken broth. Bring to a boil, reduce heat, and simmer 15 minutes, until vegetables are tender.
  • With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with nutmeg, salt, and pepper.

  • In a saucepan, bring chicken broth to a boil. Add broccoli, onion and bay leaves. Reduce heat and simmer until broccoli is tender; remove bay leaves. Meanwhile, in another saucepan, melt butter.   • In a stock pot, heat the oil and add the onion, cooking until translucent, then add the thyme and garlic.
  • Season with salt, freshly ground black pepper, cayenne pepper and thyme leaves, and immediately add the stock; stir.
  • Bring stock to a boil, and add broccoli and mushrooms. Cover, lower heat to simmer and cook, stirring occasionally, for about 10-15 or until broccoli becomes tender (depends on the size of the broccoli pieces).
  • Whisk flour and paprika into a small bowl along with the evaporated milk. Stir into soup, and raise heat, stirring constantly. Steps:

  • Heat 2 tbsp rapeseed oil in a large saucepan and then add 1 finely chopped onion. Cook on a medium heat until soft. Add a splash of water if the onion starts to catch.
  • Add 1 sliced celery stick, 1 sliced leek, 1 diced medium potato and a knob of butter. Stir until melted, then cover with a lid. Allow to sweat for 5 minutes then remove the lid.
  • Pour in 1l of chicken or vegetable stock and add any chunky bits of stalk from 1 head of broccoli. Cook for 10-15 minutes until all the vegetables are soft.
  • Add the rest of the roughly chopped broccoli and cook for a further 5 minutes.
  • Carefully transfer to a blender and blitz until smooth.
  • Stir in 140g crumbled stilton, allowing a few lumps to remain. Season with black pepper and serve.

  • Warm olive oil in bottom of large (I use a 9.5 quart) Dutch Oven over medium-high heat. Brown pork ribs.
  • Reduce heat to medium and add onion and garlic, cook uncovered and stirring frequently until just beginning to soften, about three minutes.
  • Add 16 cups of water, the tomato and both packets of tamarind seasoning. Cover and cook over medium heat for 45 minutes. During the cooking add fish sauce and hot sauce to taste. I typically revisit the 'taste and adjust' step a couple of times depending on my mood.
  • Add white radish, cook additional 10 minutes.
  • Turn off flame/heat and add bok choy. Allow to rest for 10 minutes.
  • Serve in a soup bowl or over rice. ENJOY!
