BANANA SOLE
This lovely summer dish has a magical flavor combination of filet of Sole, bananas and lemon sauce. Easy to prepare and you can substitute any other mild flavored seafood.

Steps:
- Slice bananas lengthwise.
- Remove bones from fish if needed.
- Heat oil on medium-high heat.
- Dredge fish in flour and shake off excess, then dip in eggs.
- Place battered fish in hot oil. Flip when ready.
- Remove from pan when cooked and keep warm on a plate.
- Repeat the same process with the bananas, flour, egg and cook.
- Sauce.
- This is a basic Francese Sauce.
- Saute shallots in oil until soft.
- Add white wine and lemon juice and let reduce by 1/4.
- Add chicken stock and bring to boil, then reduce to a simmer.
- Mix cornstarch with about a 1/4 cup of water.
- Slowly add starch mixture to sauce and stir. Add more until desired thickness is reached.
- Serve over a bed of rice and top with parsley.

GRILLED BANANAS WITH RUM SAUCE

- Peel the bananas and cut in half lengthwise. Melt a bit of butter in a frying pan.
- Cook bananas over direct high heat 4-6 minutes, turning once.
- Melt the remaining butter in a heavy sauce pan over medium heat. Add the brown sugar, the cinnamon, and nutmeg, and cook until the sugar dissolves, stirring constantly. Add rum and gently move the pan around to warm the rum, causing it to flame. Continue cooking until the flame dies out. Add the grilled bananas to the hot rum mixture and cook 3-4 minutes more.
- To serve, place a large scoop of vanilla ice cream onto each of 6 serving dishes. Place 2 banana halves over the ice cream and drizzle with some of the sauce.
SWEET POTATO-BANANA CASSEROLE
A southern recipe that gives you another option for a sweet potato casserole. We love the combination of flavours and always make this one for the holidays.

Steps:
- Cook potatoes in small amount of water until tender.
- Mash and beat.
- Add nuts, 4 tablespoons butter, sugar and coconut. If the mixture is dry, add either a little cream or orange juice to moisten.
- Pour 1/2 of the sweet potato mixture into a buttered casserole.
- Cover with mashed bananas and then top with rest of sweet potato mixture.
- Combine crushed corn flakes, 2 tablespoons butter and brown sugar.
- Cover top of sweet potatoes.
- Bake at 350 degrees for 20 minutes.

Steps:
- Preheat oven to 350°F.
- Generously butter a 9x5" loaf pan.or 8" round cake pan.dust with flour and shake out excess.set aside.
- Coarsely chop walnuts and toss with 2 tbls of flour.
- Sift flour, baking soda, baking powder, cinnamon and salt and set aside.
- Combine mashed bananas with orange juce, set aside.
- Combine eggs, sugar, oil, sour cream and orange peel in the bowl of a stand mixer with paddle and beat on medium-high 2-3 minutes.
- Stir in mashed banana mixture.and beat for 1 more minute.
- Add flour mixture on low speed just till combined.
- Stir in floured walnuts with wooden spoon.
- Pour into prepared pan; shake gently.
- Place on lower rack in oven.
- Bake for 50-55 minutes at 350°F.
- Cool in pan on wire rack for 10 minutes.
- Remove from pan and cool completely on rack.
- To prepare GLAZE: Combine all glaze ingredients except butter and vanilla; in a saucepan and cook on medium heat for 3-4 minutes.
- Cover pan, raise heat and boil for 3 minutes.
- Uncover, reduce heat to medium -- cook without stirring, but swirl pan until honey thickness, about 5-7 minutes.
- Remove from heat and add butter and vanilla.
- Cool completely and spread on cake.
