SOUR CREAM MAPLE BREAD
Had some sour cream left over from my "Sour Cream Chocolate Banana Cake"--so made this for breakfast tomorow- that is if it makes it until then...it was almost gone before it was cooled off! Photo shows double batch by Enro...

Steps:
- 1. Heat oven to 350^. Spray an 8-inch bread pan with non-stick oil;set aside. --- In a small bowl. stir and toss together the flour, baking powder, baking soda,and salt;set aside.
- 2. In a mixer bowl beat the butter and slowly add the Maple syrup. On slow speed now mix in sour cream and egg. Stir in pecans. Add the flour mixture and stir until just blended.
- 3. Spoon batter into the prepared pan and bake for about 50-60 minutes;or until a toothpick inserted comes out clean. Remove from oven and let set on wire rack to cool for 15 minutes; then remove from pan and cool completely. NOTE: Can use this batter to make muffins too!
SOUR CREAM MAPLE BREAD
This is from Williams-Sonoma. This bread boasts subtle flavors of butter and sour cream with discreet overtones of maple syrup. A handheld mixer can be used instead of a whisk to blend the butter and syrup, but further mixing is easily done by hand.

- Preheat an oven to 350ºF. Grease and flour a 1-lb. loaf pan.
- In a small bowl, stir and toss together the flour, baking powder, baking soda and salt. Set aside.
- In a bowl, using a whisk, beat the butter until smooth, then slowly add the maple syrup, whisking constantly. Whisk in the sour cream and egg. Stir in the pecans. Add the flour mixture and stir until just blended.
- Spoon the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes. Transfer the pan to a wire rack and let cool for 15 minutes, then turn the loaf out onto the rack and let cool completely. Makes 1 loaf.

This is a different banana bread, sweetened with maple syrup. It's my absolute favorite banana bread. I'm sure you will love it this version.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9 inch loaf pan.
- In a large bowl, mix the melted butter and maple syrup. Beat in the egg and bananas, leaving a few small chunks. Stir in the maple extract and milk. In a separate bowl, mix the flour, baking soda, and baking powder, and stir into the banana mixture just until moistened. Transfer to the prepared loaf pan. Mix the nuts and sugar, and sprinkle evenly over the batter.
- Bake 50 minutes in the preheated oven, or until a knife inserted in the center of the loaf comes out clean.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, mix bananas, sour cream, maple syrup and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. For streusel, in a small bowl, mix flour, sugars, butter and cinnamon until blended. Stir in pecans; sprinkle over batter., Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.
