KAHLUA CAKE
A decadently wicked-rich chocolate cake that is so easy to make... Recipe from Southern Living, 2002.

Steps:
- Stir together first 5 ingredients in a large bowl; blend well.
- Stir in morsels and, if desired, brickle chips.
- Pour batter into a greased& floured 10" bundt pan.
- Bake at 350 degrees for 50 to 55 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and cool completely on wire rack.
- Sprinkle with powdered sugar.
- Beat whipping cream at medium speed with electric mixer until foamy.
- Gradually add 1/4 cup powdered sugar, beating until soft peaks form.
- Serve with cake.

EASY MICROWAVE TOFFEE
I found this recipe and kept loosing it--and let me tell you, you don't want to lose this delicious toffee recipe. They are quick and easy, but make sure you have a candy thermometer before you start.

Steps:
- Combine butter, brown sugar, sugar, corn syrup, and water.
- Microwave on high 2-2½ minutes until butter is melted.
- Stir well to blend butter and sugar.
- Stir in 1/3 cup almonds.
- Microwave on high for 9-11 minutes until the temperature reaches 300°F.
- Pour on to a baking sheet.
- Break candy bars into small pieces and sprinkle them on top.
- Sprinkle the remaining almonds on the top also.
- Let toffee cool until it hardens, then break it up into small pieces and enjoy.

CHOCOLATE PECAN TOFFEE
This is a great recipe, and it melts in your mouth. Whenever I make this, it is gone in two days, or sooner!

Steps:
- Butter sides of heavy saucepan.
- Cook the butter, sugar, corn syrup, and water over medium heat until it reaches 290 degrees, stirring constantly.
- Remove from heat.
- Spread coarsely chopped nuts evenly on a 9x9" baking pan.
- Pour sugar mixture onto baking pan.
- Spread to edges with a wooden spoon.
- Place finely chopped nuts on sugar mixture.
- Place chocolate chips on top of sugar mixture, then wait for them to melt.
- Once the chocolate chips melt, spread them evenly around sugar mixture and nuts.
- Put in cool place to harden.
- Break into pieces, and store covered in a refrigerator.

TURTLE TRIFLE
From Southern Living Magazine, December 2006. This recipe is unique because it uses a frozen pecan pie, thawed. You could always make your own pecan pie. My favorite pecan pie on Zaar is Recipe #8163.

Steps:
- Beat mascarpone cheese, whipping cream, and vanilla extract in a large bowl at medium speed with a heavy-duty electric stand mixer, using the whisk attachment, 2 to 3 minutes or until smooth and firm.
- Place half of pie cubes in bottom of a 4-quart trifle dish or tall, clear 4-quart glass bowl.
- Spread half of whipped cream mixture over pie cubes.
- Drizzle with half each of chocolate fudge topping and caramel topping. (You might need to zap the fudge and caramel topping in the microwave for 15-25 seconds to get them to drizzling consistency).
- Sprinkle with half of chopped pecans.
- Repeat layers.
- Cover and chill at least 1 hour and up to 8 hours.
- **Cook time does not include toasting the pecans, defrosting the pie, or refrigeration time.

- Butter a 15- x 10-inch rimmed baking sheet. Melt 1 1/4 cups butter in a large heavy saucepan over medium; stir in granulated sugar, brown sugar, water, molasses, instant espresso, cinnamon, and salt. Cook, stirring constantly, until a candy thermometer just registers 290°F, about 20 to 25 minutes. Remove pan from heat, and stir in 1 1/2 cups of the chopped toasted almonds. Quickly pour mixture into prepared pan, and spread into an even layer, covering bottom of pan. Immediately sprinkle chocolate chips over top; let stand 5 minutes to melt. Spread chocolate in an even layer over toffee, using an offset spatula. Sprinkle evenly with remaining 1/2 cup chopped almonds. Let stand 5 minutes, and if desired, sprinkle with sea salt. Cover and chill until firm, about 30 minutes.
- Break toffee into about 18 pieces. Store in an airtight container in refrigerator up to 7 days. Serve cold or at room temperature.
