Sweet Potato Pecan Pie image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake sweet potatoes until fork-tender, 40 to 50 minutes. Cool until easily handled.
  • Peel and mash sweet potatoes. Make sure all lumps are removed, straining if necessary.
  • Lightly beat eggs. Blend together eggs and sweet potatoes. Stir in sugar, salt, cinnamon, ginger, and cloves. Blend in cream. Pour into pie shell.
  • Bake in the preheated oven for 45 to 55 minutes, or until knife inserted halfway between center and edge of pie comes out clean. Cool completely on a rack.
  • Make the caramelized pecan topping. Combine butter or margarine, brown sugar, and pecans. Gently drop by spoonfuls over cooled pie to cover top. Broil 5 inches below heat until mixture begins to bubble, about 3 minutes. Watch carefully, if cooked too long, top will turn syrupy. Cool on rack.

Traditional Southern-style sweet potato pie. This is my mother's recipe, but she's Mimi to my kids, so in our house we call this dish Mimi's sweet potato pie. It's delicious right out of the oven, at room temp, or right out of the refrigerator.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
  • Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.
  • Bake in the preheated oven until firm, about 45 minutes.

Southern Sweet Potato Pie with Marshmallows and Pecans image

Steps:

  • Preheat oven to 350°F. Pour 2 cups of water into a medium size cooking pan. While waiting for the water to boil, peel the medium sweet potato, wash off, and then slice down the middle. Put them in the boiled water, turn down to medium heat. Cook in boiled water for about 25-30 minutes depending on the sweet potato. Check with a fork to see if potato is done.
  • When done, take out into a medium size mixing bowl, mash down sweet potato with a masher utensil, let cool for about 5-7 minutes, and then add eggs and butter, mix together. Then add the sugar and mix well. Add the vanilla flavor, mix well. Then add the evaporated milk, mix well. Then lastly, sprinkle nutmeg to desired taste, mix well.
  • Pour in a deep dish pie crust, and bake for 25-30 minutes. Stick a toothpick in to see if ready to take out. When done, let stand for 5-10 minutes to cool. Then add pecans completely over the top of the pie. Then add your marshmallows for a treat that's out of this world. Indulge and enjoy.....

Sweet Potato Pie with Pecan Topping image

Steps:

  • To make the sweet potato puree, cover sweet potatoes with water in a large saucepan. Bring to a boil; cook until tender when pierced with the tip of a paring knife, about 15 minutes. Drain; puree in a food processor until completely smooth. Let cool completely before using (refrigerate or freeze for quicker cooling).
  • To make filling, preheat oven to 375 degrees. In a large bowl, whisk eggs, 1/3 cup brown sugar, and maple syrup until smooth. Add sweet-potato puree, salt, cinnamon, nutmeg, and 3/4 cup cream; whisk until completely smooth. Place cooled crust on a rimmed baking sheet; pour filling into crust. (If using a store-bought crust, defrost 10 minutes; prick bottom all over with a fork.)
  • Bake pie on lowest rack of oven until filling is set, about 50 minutes. If crust browns too quickly, tent edges with foil. Transfer pie to a rack to cool, 1 hour; transfer to refrigerator to cool completely.
  • To make the pecan topping, melt butter over medium heat in a medium saucepan. Add remaining 1/2 cup light-brown sugar and pecans. Cook, stirring, until sugar is incorporated and the mixture is smooth, about 3 minutes. Stir in remaining tablespoon cream; let cool 1 to 2 minutes. Pour mixture over cooled pie. With a butter knife or spatula, spread mixture over pie. Cool until topping has hardened, about 30 minutes. (Do not refrigerate again; keep pie in a cool place up to 6 hours.)

  • Preheat oven to 450°F. Prepare Pastry for a Single-Crust Pie. On a lightly floured surface, use your hands to slightly flatten pastry. Roll pastry from center to edges into a circle about 12 inches in diameter. Wrap pastry circle around the rolling pin. Unroll into a 9-inch pie plate.
