  • In a skillet over medium-high heat, add the olive oil, bell pepper, jalapeno and onions and cook until starting to soften, 3 to 4 minutes. Add the ground beef and cook until totally browned, about 8 minutes. Add the chili powder, cumin, salt, black pepper and crushed red pepper and stir to combine.
  • Pile the mixture into individual romaine lettuce leaves and top each with 2 tablespoons pepper jack, 1 tablespoon chopped tomatoes, one-eight of the red onion, 2 slices of avocado, one-eighth of the corn, a dollop of sour cream, 1 tablespoon cilantro and 1 lime wedge.

Beefy Mac and Cheese image

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. Spread over the beef mixture. Mix the remaining 1/2 cup cheese and the breadcrumbs; sprinkle over the pasta mixture and broil until golden. Top with the scallions.

  • Preheat oven to 375°. Place tortilla chips in an ungreased 9-in. pie plate; set aside. In a large skillet, cook beef over medium heat until no longer pink; drain. Thick, rich and hearty beef stew that is anything BUT bland, if you know what I mean! It took me several years to perfect this recipe, and I'm proud to say that it was recently published in Taste of Home magazine! I'm a Midwest meat and potatoes kind of girl, and always liked beef stew, but it was always just "ok". Even people that say they don't care for spicy foods really liked it! Hope you try it! Enjoy!

Kelly's Southwestern Beef Stew image

Steps:

  • In large ziplock baggie or large mixing bowl, combine flour, paprika, chili powder, garlic powder and salt.
  • Add meat and shake/toss til all is coated.
  • In large heavy-bottomed pot that has a lid, brown meat over med-high heat in the 4 tbsp Crisco.
  • Add next 8 ingredients, cover and simmer for about 45 minutes, stirring only occasionally, til meat is tender.
  • Add carrots and potatoes, recover and simmer another 25-30 minutes or til tender.
  • Add corn, heat through.
  • Remove bay leaf, or, leave it in there and whoever happens to get it has to do the dishes! ;).
  • *Can add or sub peas and/or green beans if desired. You can also add 1 rib of celery, sliced, at the same time you add the potatoes and carrots if desired.
  • **If you like it on the thick side like we do, just mix 1-2 tablespoons cornstarch with equal amount of cold water (I use 2 tbsp each), stir into pot while simmering to thicken even more. Simmer, stirring, for several minutes. Do this at the very end. Stir gently so you don't wreck the green beans if added.

Steps:

  • In a small bowl, combine the chili powder, cumin, coriander, oregano, ancho chili powder, allspice and cinnamon; stir in 2 tablespoons of the oil to make a paste.
  • Set aside.
  • In a Dutch oven or large saucepan, heat the remaining oil over medium-high heat.
  • Brown the beef in batches.
  • Remove to a plate and drain the fat from the pan.

Pete's Own Southwest Beef Roast image

Steps:

  • preheat a large skillet (preferably cast iron) to about 350 degrees.
  • (If using regular skillet heat on med-hi).
  • Season roast w/salt,pepper and 1 Tbsp chili powder on all sides.
  • Add oil to skillet and brown roast,turning roast after 2 minutes on each side.
  • Put roast in a crock-pot or 6-quart stock pot.
  • Pour all three cans diced tomatoes and chilies over roast to cover (add water if liquid doesn't cover roast) Add remaining chili powder to pot, stir into liquid as best as possible.
  • cook 2-5 hours or until meat is tender.
  • About 30 minutes before roast is done, ladle 2 cups of liquid from pot into a saucepan using a wire strainer to remove chunks of tomato.
  • Mix flour with water until dissolved.
  • Remove saucepan from heat and add in flour mixture,stir until well blended.
  • Return pan to stove on low heat.
  • Stir until sauce thickens.
  • Slice meat thin,serve with spanish rice.
  • Spoon sauce over meat and enjoy!
