Southwest Chicken - Instant Pot Recipe - (4.4/5) image

Steps:

  • Using a "pot in pot", one layer of each: chicken, corn, salsa, taco seasoning and jalapeno slices. Tightly cover with foil. Place in the IP on top of the trivet with a cup of water in the bottom. Manually set to 20 minutes, high pressure. Natural pressure release 10 minutes. Quick release any remaining pressure. Stir in sour cream and serve. I chunk up the chicken (in the pan) and serve over rice.

2 chicken breasts, thawed
1-12 oz pkg of frozen corn (I used a roasted corn blend with bell peppers,
onions, and black beans)
1 cup jarred salsa
1 T taco seasoning
4 sweet pickled jalapeno slices (use less or none if you don't like spicy)
2-4 oz sour cream

SOUTHWEST CHICKEN

Chicken breasts with black beans, corn, chile peppers, tomatoes. Low-fat, easy and quick. Serve over hot cooked rice if desired.

Steps:

  • In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides. Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve.

  • In the bottom of your Instant Pot, stir together chicken broth, quinoa, beans, tomatoes, bell pepper, onion and one tablespoon of taco seasoning. Place chicken on top and sprinkle with remaining taco seasoning. Secure lid of Instant Pot and turn valve to seal.
  • Turn valve to “vent” to quick release pressure. Chicken should be at 165 degrees Fahrenheit or above. When pressure is released, remove lid and sprinkle cheese on top. Place cover back on for 1 minute or until cheese is melted.

  • Place the brown rice, salsa, kidney beans, corn and chicken stock in the instant pot. Stir to combine.
  • Nestle the chicken breasts (leave them whole so they won't get dry during cooking) down in the rice/liquid mixture. Sprinkle the chili powder, garlic powder, onion powder, cumin and salt partly over the chicken and partly over the liquid/rice mixture. Spread out the spices and mix some in with the liquid with spoon. (This doesn't have to be precise. Just get some in with the rice and some on the chicken.)
  • Secure the lid and cook on HIGH PRESSURE for 24 minutes (select Manual and then dial up or down to get to the correctly number of minutes; the IP will start on it’s own).
  • Let the pressure naturally release for 10 minutes and then quick release the rest of the pressure. Remove the chicken breasts and shred into bite-sized pieces. Fluff the rice with a fork and mix in the chicken and shredded cheese.

  • Pour black beans and salsa on top of chicken, using a spoon to make sure the chicken is covered completely.
  • Seal the instant pot cover and close the steam release valve. Set the pressure to manual, high pressure for 5 minutes.
  • When finished cooking, let set for 2 minutes and open the lid. You shouldn't have to release the pressure as 2 minutes is enough time for it to release naturally.
