SOUTHWEST SKILLET

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, rice, water, green pepper and seasonings. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. , Remove from the heat. Sprinkle with corn chips and cheese. Cover and let stand for 3 minutes or until cheese is melted.

1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup uncooked instant rice
1/2 cup water

1-1/2 teaspoons chili powder
1/2 teaspoon garlic salt
1/2 teaspoon salt
1 cup corn chips
3/4 cup shredded cheddar cheese

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until no longer pink in center.
  • Stir in vegetables, beans and salsa; reduce heat to medium. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Sprinkle with tortilla strips and cheese. Cover and cook about 2 minutes or until cheese is melted.

A spicy macaroni skillet dinner that I found on Muellers. Although the recipe doesn't call for it, you could probably add ground beef (I just followed the original recipe).

Steps:

  • 1. Cook and drain pasta according to package directions.
  • 2. Heat oil in a large skillet over medium-high heat; add onion, green pepper, garlic, chili powder, cumin and salt; cook, stirring occasionally, for 4 minutes, or until vegetables are tender.
  • 3. Add tomatoes, kidney beans and corn; bring to a boil.
  • 4. Reduce heat; simmer, stirring occasionally, for 15 minutes.
  • 5. Toss with hot macaroni; sprinkle with cheese.

8 oz elbow macaroni
2 Tbsp vegetable oil
1 medium onion, chopped
1 medium green bell pepper, chopped
2 clove garlic, minced
2 Tbsp chili powder
1/2 tsp ground cumin
1/2 tsp salt (optional)
2 14 oz. can(s) diced tomatoes, undrained
1 15 oz. can(s) kidney beans, rinsed and drained
1 11 oz. can(s) corn, drained
1/2 c shredded pepper jack cheese
