SOUTHWESTERN BAKE
A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
- In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
- Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
- Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

BAKED BEANS SOUTHERN STYLE
I saw this recipe on Paula Deen and gave it a try and it's the best baked beans I have ever eaten. I did replace a few ingredients to suit my style.

Steps:
- Preheat oven to 350°.
- In a large bowl combine first seven ingredients, stir well.
- Lightly spray Pam in a medium size casserole dish and pour in bean mixture.
- Place slices of bacon over top of beans.
- Cover and bake 30 minutes.
- Uncover and bake extra 15 minutes.
- Note: You can drain one can of pork & beans to keep it from having too much liquid in dish.

TEXAS-STYLE BAKED BEANS
Take the time to make up a batch of these authentic Texas baked beans the next time you have an outdoor cookout. They are sure to be a hit! - Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
- Heat oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion begins to soften, 5 to 7 minutes. Add bacon, bell pepper, and jalapeno peppers; cook and stir until bacon is browned, 7 to 10 minutes more.
- Stir beer, barbeque sauce, brown sugar, and molasses together in a large bowl; add pinto beans and bacon mixture. Season with garlic salt and black pepper. Pour beans mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling and browned, about 45 minutes.

- Add beans to a saucepan; add enough water to cover; add in the vinegar; soak overnight.
- Drain and rinse beans.
- Add beans and remaining ingredients to a slow cooker; stir to combine.

- Heat the oil in a medium saucepan over medium-high heat. Add the jalapeno and garlic and cook, stirring, until fragrant, about 30 seconds. Add the beans, 1/3 cup water, oregano and 1/8 teaspoon salt and cook, stirring, until most of the liquid is evaporated, about 3 minutes. SOUTHWEST BENEDICT
Steps:
- Fill a large skillet with about 2 inches of water. Bring the water to a gentle boil. Drop each egg carefully into the simmering water. Let them cook for 3 to 4 minutes, until the whites are firm. Gently scoop each egg out with a slotted spoon and drain eggs thoroughly.
- Cut the chorizo sausage links in half lengthwise and then brown them in a medium-sized skillet until fully cooked. Remove from heat and drain sausage. While sasuage is cooking, lightly toast the English muffins.
- To serve, place 2 halves of a chorizo link on each half of the English muffins. Place 1 poached egg on top of the chorizo links. Spoon some Chipotle Hollandaise sauce on each muffin. Serve immediately.
- Whip the egg yolks until they are foamy. Continue whipping while you add the hot sauce, Worcestershire sauce, salt, and lemon juice. Transfer the mixture to the top of a double boiler and place over medium heat, and continue whipping by hand until sauces thickens and forms ribbons when the whisk is lifted. Then remove sauce from the heat and add the butter and the chipotle puree.
SOUTHWESTERN CHIPOTLE BAKED BEANS
From Pepperfool.com. I'm always looking for something different to serve with my Tex-Mex casseroles and this is so good. I used 2 can of Great Northern Beans. Also brown my bacon in with onions, etc. I like my bacon cooked some. Wonderful smokey chipotles taste.
