I've been making this mild family-pleasing southwest casserole recipe for years. It tastes wonderful, fits nicely into our budget and, best of all, makes a second one to freeze and enjoy later. -Joan Hallford, North Richland Hills, Texas

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

Steps:

  • Heat oven to 375 degrees.
  • In medium bowl, stir together Alfredo sauce, 2 cups of water and pepper.
  • Pour 1 cup sauce mixture into bottom of 2 1/2-quart casserole.
  • Arrange half the tortellini (uncooked) in a single layer over sauce.
  • Sprinkle with broccoli.
  • Pour 1 1/2 cups sauce over top.
  • Repeat layering remaining tortellini and remaining sauce.
  • Cover with foil.
  • Bake for 45 minutes.
  • Remove from oven.
  • Heat broiler.
  • In small bowl, stir together bread crumbs and olive oil until evenly coated. Sprinkle crumbs on top.
  • Place casserole under broiler about 4 inches from heat until crumbs are golden, 1 to 2 minutes. Let stand 10 minutes before serving.

  • Preheat oven to 350 degrees. Lightly grease/spray a 1 1/2 qt casserole dish.
  • In a bowl, toss together the black beans, tortellini, green chilies, diced tomatoes and cumin. Mix well and pour into the prepared casserole dish.
  • In another bowl, stir together the sour cream, lime juice and sugar; evenly spread this over mixture in the casserole dish.
  • Evenly sprinkle with cheese, then olives, then green onions, then the cilantro.

  • Melt butter in a large saucepan.
  • Add garlic and onion.
  • Cook gently 3- 4 minutes until fragrant and tender.
  • Sprinkle with flour.
  • Cook 3- 4 minutes longer but do not brown.
  • Whisk in milk.
  • Bring to a boil.
  • Add tomatoes, paste, herbs, salt and pepper.
  • Cook 5 minutes.

This is a twist on a taco casserole. I love to create in the kitchen. I made this last night, and the family loved it, so I thought I would jot it down while it is still fresh in my mind. This does have a kick to it and I would suggest that if you don't like spicy you can modify to your taste. I hope you enjoy as much as we did.

Steps:

  • preheat oven to 375 degrees.
  • Remove Chorizo sausage from casing, place in large skillet and saute over med-high heat.
  • Once sausage has started to release fat, add the onion, jalapeno, and garlic.
  • As onions become translucent add the ground beef and cook until browned.
  • drain about 2/3 of the fat from the pan then add taco and Sazon seasonings.
  • Stir to combine and let simmer on low.
  • Empty can of soup into a bowl and add 1/2 the can of milk, mix well, set aside.
  • Heat tortilla on both sides. I used a griddle, but a non stick pan will work as well. Once heated, cut into fourths.
  • spray a 9x13 baking dish with cooking spray. Arrange tortilla pieces to cover the bottom of the pan.
  • Add meat mixture over the tortillas, spread evenly.
  • Now layer the following ingredients: tomatoes, corn, beans, and soup mixture.
  • Arrange a layer of tortilla's to cover casserole.
  • Pour cup of salsa over tortillas just enough to cover.
  • Bake in oven for about 20 minute Then add the shredded cheeses and bake another 10 min, until cheese has melted and is bubbly.
  • I served with chopped onion, chopped black olives, and a dollop of sour cream.

BAKED TORTELLINI CASSEROLE

For this baked tortellini casserole, I used one large skillet and one casserole pan. I made a quick basic meat sauce with onions, garlic, ground beef and canned tomatoes. But instead of simmering and reducing the sauce, I combined the cheese and fresh uncooked tortellini, and let the entire mixture bake in the oven. Just be sure to keep it tightly covered with foil so it stays moist. The foil keeps the moisture in and cooks the tortellini as it bakes.

  • Creamy Salsa Dressing: Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency. Tortellini Salad: Add tortellini, corn, bell pepper, tomatoes, black beans and red onion to a large bowl. Toss to combine with enough Creamy Salsa Dressing to coat (about 2/3 of dressing) and reserve remaining dressing.
