LIGHT & CRISPY VEGAN WAFFLES

The best vegan waffle I've had. Golden-brown, crispy, light, tender, full of flavor (especially with those appealing vanilla bean flecks). Plus, only 6 ingredients and 1 bowl!

Light & Crispy Vegan Waffles image

Steps:

  • Preheat your waffle maker.
  • If the coconut milk is solidified, place it into a small saucepan and set over low heat. Heat just until liquid, but not warm.
  • Pour coconut milk into a large mixing bowl. Scrape the pulp of the vanilla bean into the coconut milk (discard the pod) or add vanilla bean paste or extract. Stir to combine.
  • Add the flour, sugar, baking powder, and salt. Stir gently with a wooden spoon just until combined (if you overmix, you risk making the waffles tough; don't worry, a few lumps are okay).
  • Spray your preheated waffle maker with cooking spray, if using. Pour batter into your waffle maker according to manufacturer instructions, as waffle makers vary. My waffle maker takes a heaping 1/3 cup per side.
  • Cook until golden brown, as per your individual waffle maker.
  • Serve with pure maple syrup, butter (or vegan butter), fresh berries, or anything else you'd like!

These waffles are so yummy it feels sinful eating them. Even my husband and 3-year-old who don't share my vegan eating habits loved them! You can use rice milk instead of soy.

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Stir water and flax seed meal together in a bowl.
  • Blend oats in a blender into a flour-like consistency. Add flax seed mixture, soy milk, all-purpose flour, whole wheat flour, canola oil, baking powder, vanilla extract, agave nectar, and salt to oats; blend until batter is just mixed.
  • Ladle 1/2 cup batter into preheated waffle iron. Cook the waffles according to manufacturer's instructions until golden and crisp, about 5 minutes.

Steps:

  • 1) Grease waffle iron witha small amount of melted butter and heat. In a large bowl, sift together the flour, sugar, baking powder, sugar, cinnamon, and salt. 2) In a separate bowl, whisk together egg yolks, milk, melted butter, and vanilla. Pour into dry mixture, and combine. 3) In a medium bowl, beat egg whites until stiff but not dry. Fold whites into batter. 4) Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid, and bake 3-5 mins utnil no steam emerges from the waffle iron. 5) Transfer cooked waffles to a baking sheet; place in an oven set to low heat, while using remaining batter.

8 tbsp (1 stick) melted, unsalted butter

Whole-Wheat Vegan Waffles image

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F if using to keep cooked waffles warm.
  • Whisk together the flour, sugar, baking powder, cornstarch and 3/4 teaspoon salt in a large bowl. Whisk together the soy milk, oil and vanilla in a medium bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it is OK if there are some lumps).
  • Generously spray the top and bottom of the waffle iron with cooking spray. Fill each compartment almost completely, and spread the batter to the edges. Close the lid and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Serve with maple syrup, nut butter or fruit preserves.

Homemade Soy Milk image

Steps:

  • Place soy beans in a very large bowl. Add enough water so that the ratio of water to soy beans is 2 to 1; let soy beans soak overnight at room temperature.
  • Drain soy beans. Working in batches, transfer soy beans to the jar of a blender. Add enough water to the jar of the blender so that the ratio of water to soy beans is 1 to 1; blend until smooth. Transfer pureed soybeans to a large bowl. Repeat process with remaining soy beans and water.
  • Place 6 1/2 cups water in a large saucepan and bring to a boil over high heat. Stir in soy bean mixture using a kibera or a wooden spoon. Bring mixture to a simmer and immediately remove from heat.
  • Line a fine mesh sieve set over a large bowl with cheesecloth. Pour soy bean mixture into lined sieve; let stand until cooled.
  • Squeeze remaining soy milk through cheesecloth; discard cheesecloth and any remaining solids.
