BAKED TOFU

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
- Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
- Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
- Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.

SOY-SESAME BAKED TOFU
Only 3 ingredients! This is the first time I have tried making baked tofu, and it's pretty good. I just made up this combo of flavors to put in a Thai stir-fry, but you can probably use any type of marinade, and you can use baked tofu for sushi rolls, soups, salads, or just as a snack!

Steps:
- Turn the tofu block on its side, and slice it into slices about 1/4 inch thick (you should get 4 slices). Put several layers of paper towels on each side, and make sure you extract as much moisture as you can.
- Mix the soy sauce and sesame oil in a small bowl.
- Prepare a baking sheet by lining it with aluminum foil. Lay the slices of tofu on the baking sheet, being careful so that they don't tear.
- Brush the soy sauce and sesame oil on both sides of each piece of tofu, being careful to make sure they don't tear too bad when you turn them (if they do a little, it's ok). Use all the marinade between all 4 pieces of tofu.
- Preheat the oven to 375 degrees F.
- Let the tofu sit and absorb the marinade while the oven preheats.
- Bake for 40 minutes, turning once with a wide spatula halfway through the baking time.

I had a picky 19 year-old try this and he gobbled it up, as did everybody else at the table. People were disappointed, but only because I didn't have enough.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange tofu slices into a square baking dish in a single layer.
- Stir water, soy sauce, balsamic vinegar, brown sugar, ginger, garlic, and cornstarch together in a small saucepan; bring to a boil while stirring continually. Pour sesame oil into the boiling mixture while stirring to incorporate fully; remove from heat and pour over the tofu.
- Marinate tofu for 15 minutes.
- Heat a small skillet over medium heat. Cook sesame seeds in skillet until fragrant, about 5 minutes.
- Bake tofu in preheated oven until it looks glazed, about 25 minutes. Garnish with sesame seeds and green onion.

- Place tofu container in the fridge for at least a few hours, one night is ideal (and up to 3 nights is okay as well). If you get a chance give the tofu a shake to get the marinade over all the tofu pieces.

- Press the tofu: Wrap each block of tofu in paper towels. Place a plate or pan on top of the wrapped tofu, and put a couple of heavy books on top of that. Let the tofu press for 20 minutes.
- Preheat the oven to 400 degrees F and lightly grease a large baking sheet with oil or line with parchment paper.
- Slice the pressed tofu into cubes, then add them to a large ziplock bag (or large bowl), along with the sesame oil, soy sauce and cornstarch. Close the bag, and shake gently to coat. Arrange the tofu evenly on the prepared pan, and bake for 25 minutes, or until golden and crispy.
- While the tofu bakes, cook your rice and make the sauce. In a large pan, add the soy sauce, garlic, agave, seasoned rice vinegar and Sriracha hot sauce. Stir and bring to a simmer over medium heat. In a small bowl, mix the cornstarch and water together until smooth, then pour into the pan. Stir constantly until the sauce thickens, then turn off the heat. Stir in the sesame oil.
