- In a Dutch oven, heat olive oil over medium heat. Add onions; saute until softened. Add garlic; cook 1 minute longer. Stir in tomato paste; cook 3-5 minutes. Add next 6 ingredients. - Pulse the sandwich bread in a food processor to form coarse crumbs. Add the beef, 1/4 cup onion, mushroom, 1 tablespoon garlic, parsley, and egg white; season with salt, pepper and nutmeg; pulse again to finely chop and combine. Portion into about 20 meatballs (about 1-inch in diameter) and place on a plate.
- In a medium saucepan, heat the oil over medium heat; add the remaining garlic and onion. Cook, stirring occasionally, until tender, about 10 to 12 minutes. Stir in the tomatoes and broth. Tie sprigs of basil and thyme together with kitchen twine; add to the tomatoes. Bring to a simmer and cook, stirring occasionally, 20 minutes. Add the meatballs and continue to simmer, without stirring, until the meatballs are partially cooked, about 10 minutes. Turn the meatballs; cook 10 minutes more or until fully cooked.
- Meanwhile, cook the pasta according to package directions in boiling salted water; serve the meatballs and sauce over the spaghetti.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
- Combine ground beef, onion, crackers, egg, salt, and pepper in a large bowl and mix until well combined. Shape mixture into 1-inch meatballs and place in the prepared baking dish.
- Bake in the preheated oven until no longer pink inside, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Make the meatballs: In a large bowl, combine bread crumbs and cream. Let it sit for 5 minutes, then mash the mixture with a fork. Mix in the oregano, pepper flakes, black pepper, salt and bacon. Gently work in the pork, veal and beef. Be careful not to knead it into oblivion, or the meatballs will be tough little pebbles. Fry a little of the mixture in some butter and oil in a skillet and taste, adjusting seasonings. Roll into small meatballs, about an inch across. (If you have a kitchen scale, measure an ounce apiece.)
- Heat the oven to 375 degrees. In a large sauté pan, warm the butter and olive oil over medium-high heat. Brown the meatballs, turning every couple of minutes. (Work in batches if they won't all fit in the pan.) Transfer them to a roasting pan big enough to hold them all. Pour 2 cups of cold water into the pan and transfer it to the oven to bake for 20 to 30 minutes or so, until the meatballs are cooked through. Transfer to a plate and cover with aluminum foil to keep warm.
- Boil the spaghetti in a large pot of salted water, and heat the marinara sauce in a pot. When the spaghetti is tender, toss it with the sauce. Season to taste. Put the cheese in a bowl and set it on the table. Make sure to ask your family if they want their meatballs on top of the spaghetti or on the side.

- Combine water and flaxseed meal in a small bowl and stir together until well combined. Set aside and let flax "egg" thicken for 5 minutes.
- Combine beans, carrot, sun-dried tomatoes, and olive oil together in a food processor; puree until well combined. - Preheat the oven to 400˚F (200˚C).
- Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat.
- Lower the heat and cook for 45 minutes, until the onions are soft and starting to break apart. Remove onion.

- Combine ground meat, breadcrumbs, salt, pepper, nutmeg and chili powder, then form the mixture into small balls with the palms of your hands.
- Heat oil in frying pan, and cook onion and garlic for 5 minutes. Add the meatballs and brown all over.
- Add tomatoes, stock, wine, tomato paste, garlic powder, and salt & pepper, and simmer for 30 minutes.
- Place cooked pasta on a heated platter. Pour some sauce and meat balls over the pasta. Sprinkle with grated cheese and serve immediately.

- Mix together ground beef, Italian sausage, 1 tsp minced garlic, a sprinkle of fennel seed, small onion, dash of garlic salt, dash of pepper, dash of salt, 1/2 tsp Italian seasoning, bread crumbs, eggs.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the cheese, breadcrumbs, milk and egg in a large mixing bowl until well mixed. Add the chuck and pork and mix to combine, working gently to avoid overworking the meat. Sprinkle with the salt and pepper. Shape into small golf ball-size meatballs and place on the lined baking sheet.

- Place a large pot of water on to boil for spaghetti. When it boils, add salt and pasta and cook to al dente.

- For the sauce: Heat the oil in a large Dutch oven over medium heat. Add the ribs and brown evenly, about 4 minutes. Add the onions, sprinkle with salt and cook until translucent, 2 minutes. Add the garlic and cook until everything is soft but not browned, about 3 minutes. Add the white wine, stirring to deglaze the pan. Add the tomatoes along with the oregano, red pepper flakes if using, bay leaf and Parmesan rind. Bring the sauce to a simmer, reduce the heat to its lowest possible setting and continue to cook until reduced by about a third, for up to 8 hours.
- Taste for seasoning and add more salt if necessary. Remove the bay leaf. If not using right away, let the sauce cool, and then cover and refrigerate for up to 1 week or freeze for up to 2 months. Makes about 2 quarts.
- For the meatballs and sauce: In a small saute pan over medium heat, add 1 tablespoon of the oil, the garlic and shallots and sweat until translucent, 2 to 3 minutes.
- Soak the bread in the milk in a medium bowl.
- In a separate bowl, combine the beef with the ricotta, basil, parsley, Parmesan, salt, egg and the cooked shallots and garlic. After the bread has soaked up the milk, remove it from the bowl and ring out the remaining liquid. Thoroughly mix the bread into the meat mixture.
- Form the meat mixture into 2-inch balls using about 1/4 cup for each. Heat the remaining olive oil in a large frying pan and add the meatballs. Cook until golden on the outside, 2 to 3 minutes per side.
- Place Yia Yia's Neapolitan Sauce in a large saucepan and add the meatballs. (Keep the frying pan for finishing the pasta.) Bring to a simmer and simmer about 30 minutes.
- For the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti al dente, according to the package directions.
- Add a cup or two of the sauce to the empty meatball pan over medium heat. Drain the spaghetti and add it to the pan, along with the basil leaves, Parmesan and butter. Toss to coat. Transfer to a serving platter, top with the meatballs and ribs from Yia Yia's Neapolitan Sauce and serve with the remaining sauce on the side.

This is a new spin on a recipe from my childhood-- my dad would make spaghetti and meatballs for me and my sister when my mom was too busy to cook. It was his favorite dish to cook-- boil spaghetti, heat frozen meatballs and refrigerated store-bought sauce, mix and serve. - Line the bottom and sides of medium saucepan to about half-way up with the frozen meatballs, and pour in marinara sauce until all meatballs are covered. Set to simmer on low heat.
- Take out frozen vegetables, leave on counter.

This recipe requires a full day of cooking but the effort is worth it. My mom got this recipe over 50 years ago from an Italian friend. The baking soda is the secret ingredient to making this recipe a success so don't eliminate it. When finished, it can almost be eaten with a fork. I quadruple the recipe so I have some to freeze.

Steps:
- Mix all meatball ingredients, roll in to balls and brown in skillet. Cool and refrigerate until 1 hour prior to serving. Olive oil may be needed to brown these if using very lean beef.
- In the skillet, add chopped onions and cook until tender but not soft.
- Add garlic and can of tomatoes. If using whole tomatoes, I mash them briefly in the skillet with a potato masher.
- Cook until mixture comes to a boil.
- Put in to a large dutch oven or sauce pan.
- Add remaining ingredients except for baking soda, parmesan cheese, olive oil, salt and pepper.
- Bring to a quick boil and immediately reduce the heat to medium low as this sauce will burn.
- Add a pinch of baking soda, stir well and allow to simmer uncovered for 2 hours.
- Taste the sauce for acidity. If acid level (or tang) is still high, add another pinch of baking soda and stir well. At this point do not taste the sauce as all you will taste is baking soda.
- Cook two more hours.
- Stir occasionally to prevent sticking. If needed, add a small amount of olive oil.
- Eventually, you will start seeing the sauce getting darker around the edges of the pan. At this point you can season with salt and pepper and add the cooked meatballs.
- Cook one additional hour.
- One half hour prior to serving, stir in the parmesan cheese. This will thicken the sauce quickly.
- This sauce is best served the next day.

REAL MEATBALLS AND SPAGHETTI
Slightly adapted from the Barefoot Contessa, this meatball and spaghetti recipe is absolutely wonderful! (IMHO) The meatballs are very tender and delicious with a sauce that is absolutely yummy!

Steps:
- Place all the ingredients for the meatballs into a large bowl.
- Very gently, combine the ingredients with a fork or your hands until barely blended (overworking the mixture may make the meatballs tough!).
- Gently form the mixture into approximately 14-16 meatballs and set aside.
- Heat equal amounts of vegetable and olive oil into a large skillet and place the meatballs in the skillet in small batches (do not crowd meatballs) to brown on all sides over medium-low heat. This will take about 10 minutes.
- When they are done, remove them to a paper towel covered plate to drain.
- When finished browning all the meatballs, pour off the oils, but do not clean the skillet.
- To make the sauce, add the 1 tablespoon of olive oil to the same skillet and saute the onion over medium heat until translucent.
- Add the garlic and cook about a minute longer, but be careful not to burn the garlic.
- Add the red wine and scrape up all the bits on the bottom of the pan.
- To complete the sauce, add the tomatoes, parsley, salt and pepper.
- Return the meatballs to the sauce, cover the pan, and simmer on low heat for 25 to 30 minutes.
- Serve with the cooked spaghetti and parmesan.
- Note: The sauce and meatballs freezes well for leftovers.

- Heat olive oil in a large skillet over medium heat; cook and stir onion and garlic until onion is tender and translucent, about 5 minutes. Stir in crushed tomatoes, tomato paste, red wine, Italian seasoning, sugar, garlic powder, and garlic salt. Season with salt and black pepper. Bring to a boil, reduce heat to medium-low, and continue simmering while preparing meatballs.
- Mix ground beef, egg, bread crumbs, mozzarella cheese, and parsley in a large bowl. Roll walnut-size meatballs and place in the simmering sauce, making sure sauce covers entire meatball. Increase heat to medium and simmering until meatballs are no longer pink in the center, about 40 minutes, turning meatballs once about halfway through.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
- Serve meatballs and sauce over spaghetti with a sprinkle of Parmesan cheese.

- Mix the two types of flour together, then add the eggs and knead to form a dough. Let it sit, covered, for 30 minutes. Flour the work surface and roll out the dough to create a 2 mm thick sheet. Roll out the sheet onto the “chitarra” pasta maker and press it against the strings using a rolling pin to create the spaghetti. Alternatively, pass the sheet through a pasta maker with the appropriate attachment to create the spaghetti. Spread the pasta out to dry on a tray and sprinkle it with a bit of semolina flour to prevent it from sticking.
- For the sauce: In a saucepan, sauté half a chopped onion and a crushed unpeeled clove of garlic in 3 tablespoons of oil for 2-3 minutes. Add in the tomato passata, 1/2 cup of water, salt, and a pinch of sugar, and continue cooking for 25-30 minutes. Soak the breadcrumbs in 1/3 cup milk, then squeeze them out well. Mix them in with the ground beef and grated cheese, then add a generous grating of nutmeg. Add salt and pepper and mix well. Form the mixture into small olive-sized balls.
- Sauté them, a few at a time, in a large saucepan with 1/4 cup of hot oil for 1-2 minutes, stirring to let them cook evenly. Add half the tomato sauce to the meatballs. Cook the pasta in a large pot of salted boiling water for 4-5 minutes until al dente. Strain, then add to a pan and cover with the remaining tomato sauce. Plate the spaghetti and top with the mini meatballs. Season to taste with grated Parmigiano cheese and pepper.
