SPAM MACARONI AND CHEESE
This decadent yet simple recipe pairs creamy macaroni and cheese with crispy, salty-sweet diced Spam for a dish that bridges Puerto Rico and the South. It's much quicker than most homemade macaroni and cheese recipes (which often require making a roux and cream sauce), without sacrificing texture or flavor. It is also incredibly adaptable, because it will work with most cheeses. If you have the time and the will, sprinkle the finished macaroni with extra cheese and bake under a low broil for 5 to 10 minutes until toasted. During tough times, a box of instant mac and cheese and a can of Spam will also yield delicious results.

Steps:
- Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
- Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
- Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
- Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
- Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
- Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
- Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.
MACARONI AND CHEESE-MAPLE FRIED SPAM
My husband made this dish for me and I watched him with an extremely skeptical look on my face. I didn't like Spam and the whole maple syrup thing just sounded weird. Boy, was I ever wrong. The sweetness of the syrup and the saltiness of the Spam are one of the best flavor combinations.

Steps:
- Make macaroni and cheese per instructions on box.
- Slice Spam into 1/4" thick slices.
- Coat fry pan (non-stick works best) with maple syrup and lay slices of Spam in it.
- Fry until Spam is golden and crispy on the edges.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain.
- Place macaroni, cheese, cubed luncheon meat, and milk in a large bowl; mix well to combine. Turn out into casserole dish. Sprinkle bread crumbs on top.

MACARONI AND CHEESE SPAM GOULASH CASSEROLE
Steps:
- 1. Cook the Kraft Macaroni and Cheese by following the instructions on the back of the box.
- 2. Drain the water off of whole kernel corn. Rinse the corn off with cold water. Diced up the Spam.
- 3. When the Macaroni and Cheese is done, drain the water off in a straining pot. Add the powdered cheese, Spam, corn, tomato paste, and tomatoes. Mix everything together and let it simmer on top of the stove for about 20 minutes.

SPAM AND MACARONI HASH
This is definitely not the kind of recipe I usually post on Zaar. In fact, some people who read this recipe may think I am out of my cotton pickin' mind and wonder where I get the nerve to call my self a cook at all...lol. But, I love this stuff. First of all, you have to be a spam lover to even consider this. I have loved spam since I was younger. I don't eat it often, now that I am an adult, but there are still times that I find myself wanting it. This was one of those times. I was having a lazy day and didn't feel much like cooking and this is the recipe that resulted. I was very much in the mood for spam and for fast results. My husband even liked this and he isn't much of a spam fan most of the time! So, if you are thinking about trying this recipe, you have to love spam, ok? You can add two beaten eggs after it it all together and then put some spaghetti sauce over the top and bake it as well. I did that once but I like it better just plain when I am in a hurry!!! the cooking time of 10-12 min. is for cooking the macaroni. But if you decide to do the oven one with the beaten eggs, you will cook it 30-40 min. or until the eggs are set and well done.

- Cook the macaroni as per pkg. instructions. Drain. Squeeze the cheese sauce on the macaroni and mix well. I did not add any margarine, just the cheese sauce. When well mixed, add the green beans and mix well again. Open the can of spam and grate it. Then, add it to the macaroni/green bean mixture and mix well. If you choose not to use the diced tomatos, you are ready to eat. If you choose to use the tomatoes, add them and mix them gently inches At this point, you can either put it in a casserole dish, and pour two beaten eggs over it, then top it with a layer of spaghetti sauce and bake it until the eggs are done and its hot and bubbly OR you can just eat it the way it is sprinkled with salt and pepper. Either way, I think ist yummy. It is even better the next day heated up in the microwave. But, I warn you, if you don't like Spam, you won't like this!

- In a large skillet, over medium-high heat, add the oil. After 1 to 2 minutes, when oil is hot enough add the Spam pieces. Brown the Spam for 1 to 2 minutes on each side till pieces are crisp. Do not move the pieces too much so they don't stick to the skillet or else crumble. When Spam pieces are browned, remove from skillet and drain on parchment paper or paper towels to minimize the grease. Set aside.
- Turn up the heat to high and add the salt. Cover and bring to a boil. Continue cooking, while stirring every so often. The liquid should be absorbed and the macaroni cooked al dente in about 5 to 6 minutes.
