POLYNESIAN-INSPIRED MACARONI SALAD

I have always loved SPAM, so I decided to combine it with pineapple to make this Polynesian-inspired macaroni salad recipe. It reminds me of vacationing in Hawaii. -Susan Bickta, Kutztown, Pennsylvania

Polynesian-Inspired Macaroni Salad image

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. Meanwhile, in a large skillet, heat oil over medium-high heat. Cook Spam until golden brown, about 8 minutes. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. In a large bowl, combine pineapple, red pepper, water chestnuts, cooled Spam and macaroni. Add dressing; gently toss to coat. Refrigerate until serving. Top with green onions before serving.

One day I made the salad and another friend took a bite and said, "This would taste magnificent if you added Spam to it. So I added Spam and now it's a hit when I take it to parties or serve it to my lunch quests.

  • 1. In a large bowl, combine all of the ingredients and stir well. Chill and serve.

1-(12 oz) pkg elbow macaroni, cooked
1 medium red pepper (chopped)

1 tsp seasoning salt
1/2 tsp pepper
2 Tbsp (big squirt) of yellow mustard

From Creamettes & Spam I have had this recipe that I cut from a magazine for I probably 20 years. To tell the truth, never made it. We love Spam, yes it's true so I though and it just sound good. Hope I will get around to making it some day. I think the colored noodles would be fun with all the other colors.

  • Cook macaroni according to directions. Drain, do not chill.
  • While hot drizzle with oil and vinegar.
  • Add onion, seasonings and cheese, toss well.
  • Chill throughly. Serve on salad greens to dress up (optional).

  • Cook macaroni according to package directions. Drain; rinse with cold water and drain again., In a small bowl, mix mayonnaise, water, vinegar, sugar and seasonings until blended. In a large bowl, combine macaroni, peppers, onion and celery. Add 1 cup dressing; toss gently to coat. Refrigerate, covered, until cold, about 2 hours. Spam Macaroni and Cheese image

Steps:

  • Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
  • Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
  • Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
  • Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
  • Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
  • Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
  • Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.
