SOUTHERN GREEN BEANS WITH HAM
A staple in my home. I tried to make a green bean casserole at Thanksgiving this year and was read the riot act by the boys and told to make this instead. Can be a side or meal of its own when served with potatoes.

Steps:
- Place a large Dutch oven on the stove at med-hi heat. Add the bacon fat. Add the green beans and onion. Sauté until the onion is translucent, constantly stirring to coat the beans. They will turn a brighter green in the fat.
- Add the water or ham broth and ham pieces. Bring to boil then turn down to low and simmer until the beans are tender and the liquid is reduced. Approx 20 mins. If the water evaporates faster than the beans are cooking, adjust by adding water. If there is far too much liquid and the beans are cooking faster than it evaporates, do not cover. Final dish should still be moist but not have a lot of loose liquid. Salt and pepper to taste.
SPANISH GREEN BEANS AND TOMATOES

Steps:
- Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
- Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

SIMPLE GREEN BEANS WITH HAM
Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

- 1. Rinse beans, snip off ends and and slice to desired length. Place beans in pot with ham, onion, sugar, pepper, and water. Bring to a boil and then turn down heat to a simmer, cover pot, and cook for 1 hour on low.
- 2. Remove cover from pot. Turn heat up to medium and cook for about 20 minutes more or until liquid is reduced to a thick sauce you will serve with beans. Grandma often served these with a slice of ham and corn bread.

SPANISH GREEN BEANS WITH BACON
The quasi-classic Spanish side dish known as judias verdes con jamon. I substituted bacon for the Serrano ham. From 500 All-Time Great Recipes.

Steps:
- In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
- In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
- Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
- Season with salt and pepper. Serve warm.

- Cook the beans, left whole, in boiling salted water for 5-6 minutes, until they are just tender but still with a little bit of bite.
- Meanwhile, heat the oil in a saucepan and fry the onions for 5 minutes, until softened and translucent.
- Add the garlic and ham and cook for a further 1-2 minutes.

- Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 7 minutes. Drain, rinse under cold water and blot dry with paper towels; set aside. (This can be done up to 4 hours ahead; cover and refrigerate.)
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ham and continue cooking until warmed through, about 2 minutes. Stir in the vinegar and remove from the heat.
- Add the green beans to the pot and stir until combined and warmed through. Add the parsley and season with salt and pepper.
COUNTRY GREEN BEANS AND HAM

- In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Season with salt and pepper. Saute for 2 minutes. Add the reserved ham and beans back to the pan. Cover the beans completely with water. Bring the liquid to a boil, reduce heat to medium low, partially cover and cook for 2 hours. Remove from the heat and reseason if necessary
