Cooks Notes: You can use any citrus you have around at the time but is worth a couple of extra dollars for some heirloom varieties.

Steps:
- In a large pitcher, combine the brandy, and orange liqueur. Pour in the sugar, stir or shake the pitcher thoroughly to mix until the sugar dissolves. Add all the fruit at once. Add the cava and serve as is or on ice.
SPARKLING SANGRIA

SPARKLING WHITE SANGRIA
It's the Martinelli's Sparkling Apple Cider that makes this recipe. It provides sweetness as well as bubbles. A cheap wine works as well as a pricey one. This recipe is for about a gallon's worth, but buy enough ingredients so you can make more. Your guests will definitely ask for it.

- In a pitcher (at least 2 quarts) combine fruit and peach brandy. Stir and refrigerate for at least one hour. Add nectar and Prosecco. Stir and serve in a five- or six-ounce juice glass (also called a Delmonico glass). Be sure to include the infused fruit in each serving.

SPARKLING WHITE-SANGRIA SALAD
This recipe is from Cooking Light. Delicious and fancy enough for the holidays. This recipe uses Riesling, but for a nonalcoholic version, substitute sparkling white grape juice. Make up to a day ahead and refrigerate. Dip the covered mold into a bowl of warm water for 5 seconds to make the salad easier to unmold. I like to use canned Mandarin oranges.

- Sprinkle gelatin over 1/2 cup wine, and let stand 5 minutes.
- Combine 1 cup wine, juice, and sugar in a medium saucepan; bring to a boil over medium-high heat. Remove from heat; add gelatin mixture, stirring until the gelatin dissolves. Place pan in a large ice-filled bowl; let stand 20 minutes or until thick but not set, stirring occasionally. Whisk the gelatin mixture to form small bubbles; fold in orange sections, grapes, and raspberries. Spoon gelatin mixture into a 5-cup decorative mold coated with cooking spray. Cover and chill at least 4 hours. Place a plate upside down on top of mold; invert mold onto plate.

- Reserve some of the lime and carambola slices for garnish. In a large pitcher stir together the white wine, the mango nectar, the mango, and the remaining lime and carambola slices. The sangría may be prepared up to this point 1 day in advance and kept covered and chilled. Just before serving, stir in the ginger ale, the champagne, and ice cubes and serve the sangría garnished with the reserved lime and carambola slices.

- In a small saucepan, combine the sugar, water and vanilla. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 3-5 minutes or until sugar is dissolved, stirring occasionally. - In a large pitcher, combine the brandy, orange liqueur and sugar. Squeeze juice from one lime and one orange half into the pitcher. Stir until the sugar dissolves. Slice the remaining orange half into thin slices and add to pitcher, then add chopped apples and nectarines. Add the sparkling wine, lemon-lime soda and a large bunch of frozen grapes. Place ice cubes in glasses (do not put them in the pitcher or they’ll water the drink down) along with small bunches of frozen grapes and pour sangria over top. Spoon chopped fruit into glasses, garnish with lime slices if desired and serve.
- Note: Superfine sugar dissolves much faster than regular sugar. It is available at most supermarkets. This recipe makes a fairly sweet sangria; if you prefer it dry, use less sugar.
