SPICED CITRUS TEA MIX
This is a great thing to keep in an office desk drawer for an easy afternoon pick-me-up with a little caffeine, some vitamin C, and less sugar than soda. If you put it in a pretty jar, it makes a nice gift. I got this recipe from my mom and changed it up a bit (made it less sweet). It's good hot or cold.

SPIKED LEMONY ICED TEA

Steps:
- Cut a few thin rounds of lemon and reserve for garnish. Zest 2 tablespoons of zest from the remaining lemons, then juice the lemons (you'll need 4 tablespoons of juice; reserve any additional juice for another use).
- Make the ice cubes: Stir the lemon zest, 2 tablespoons of the lemon juice, 2 tablespoons of the sugar and the hot water in a heatproof liquid measuring cup. Pour the liquid into a standard ice cube tray and freeze.
- Make the cocktail: In a mixer, shake together the tea, whiskey, 2 tablespoons lemon juice and remaining 2 tablespoons sugar. Shake and set aside for the sugar to melt.
- Serve: Arrange a few ice cubes in 2 glasses. Add a couple of ice cubes to the mixer and shake. Pour half of the cocktail mix into each. If you like, run the edge of the glasses with the lemon slices. Garnish the glass with the slices.

I have been making this Spiced Tea Mix for over 30 years now, and it's such a wonderful treat that we look forward to every Christmas. I usually make a double or triple batch so I have extra (which I place in decorative jars or cellophane treat bags) to give as Christmas gifts to special friends, co-workers, my kids' teachers, bus drivers, and coaches. And every year I get requests for more, and someone always asks for the recipe. Feel free to adjust the ingredient amounts to suit your taste preferences. Serving size and yield are approximate (as preferences for stronger or weaker beverages can vary).

- Mix all ingredients in a large bowl and stir with a wooden spoon until all of the ingredients are well blended.
- Store the mix in an air-tight container.

- Prior to serving, strain or remove whole spices, tea bags, and serve warm. Optionally, sweeten to taste. Or, refrigerate tea and allow it to chill, and serve chilled. Store tea in the refrigerator in jarred container for up to 1 week, reheating gently in the microwave prior to serving if desired.
- Alternate timesaver method - If you're in a rush, combine all ingredients in a large pitcher, stir, and allow to stand for at least 10 minutes before serving. Flavors will not develop as much using this method because the heat brings out and unlocks their full potential, but if you're in a hurry, this is an option.
