SPICED CRANBERRY COCKTAIL ICED TEA

So good, it's tart and tangy, sweet and very refreshing. Well worth the extra effort. Make sure to serve well chilled.

Spiced Cranberry Cocktail Iced Tea image

Steps:

  • 1. In a large pot, combine water and cranberries.
  • 2. Bring to a boil, reduce heat, and simmer for 30 minutes.
  • 3. Next add the sugar, orange juice, lemon juice, cloves, allspice berries and cinnamon sticks.
  • 4. Cover and steep for 1 hour.
  • 5. Strain the mixture, pour into a large pitcher and allow to cool to room temperature on counter.
  • 6. Once cooled place in refrigerator, until chilled.
  • 7. When ready, add the pineapple juice, ginger ale, lemon and orange slices to the cranberry mixture in the pitcher and serve in tall glasses with lots of ice.

3 qt water
1 (12 ounce) package cranberries (fresh or frozen)
2 c white sugar
2 oranges, juice of, freshly squeezed
2 lemons, juice of, freshly squeezed
10 whole cloves
1/4 tsp allspice, ground
2 small cinnamon sticks
1/2 c pineapple juice, chilled
1/2 c ginger ale, chilled
ice cubes
2 oranges, sliced
2 lemons, sliced

Steps:

  • Place the cranberries and water into a large pot. Bring to a boil and cook just until the berries pop, about 5 minutes. Remove from the heat and let stand at room temperature until cold, several hours.
  • Strain out the cranberries and stir the orange juice, pineapple juice, lemon juice and sugar into the liquid. Add the cinnamon stick, whole cloves and allspice berries. Bring to a low boil. It is ready to serve at this point, but it is even better if you allow it to sit overnight.

Steps:

  • Combine water, cloves, and cinnamon stick in a medium saucepan. Bring to a boil. Remove from heat.
  • Place tea bags in spiced water, cover, and steep for ten minutes.
  • In another saucepan, combine sugar, orange juice, and lemon juice. Bring to a boil.
  • Strain tea into orange juice mixture.
  • Chill, serve over ice.
