These potatoes take 10 minutes to prepare and feature a buttery mix of Montreal seasoning, Parmesan cheese, garlic powder and paprika. You could also do these in the oven as noted in the directions.

Steps:
- Prepare grill for indirect-heat cooking.
- Place each potato on piece of nonstick foil.
- On an angle, cut 4 slits in each potato, 3/4 of the way through.
- Mix butter, seasoning, garlic powder and paprika; stir in parmesan.
- Dividing mixture evenly, spoon over potatoes; wrap in foil.
- Place on gril over indirect heat.
- Cover; cook until tender, about 1 hour.
- Unwrap potatoes; drizzle with any butter mixture in foil.
- Sprinkle with parsley.
- For a no-grill option: Preheat oven to 400 degrees.
- Bake wrapped potatoes 1 hour.

GRILLED SPICY NEW POTATOES

Steps:
- In a medium bowl, combine potatoes and 1/2 tablespoon oil.
- In a separate small bowl, mix cumin, paprika, salt, chili powder, fennel and ginger.
- Add spice mix to potatoes and toss well to coat.
- Transfer potatoes to aluminum foil and seal packet.
- Grill potatoes in foil for 15-20 minutes or until just tender.
- Transfer to serving bowl and drizzle with remaining 1 1/2 tablespoons oil.
GRILLED POTATOES WITH SPICY TOMATO AIOLI (PATATAS BRAVAS)
Steps:
- Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 12 to 15 minutes. Drain, let cool and cut each potato into 3/4-inch thick slices.
- Heat the grill to high.
- Brush the tomatoes with the some of the oil and season with salt and pepper. While the potatoes are cooking, place the tomatoes on the grill and grill until charred on all sides and soft, about 10 minutes. Remove from the grill when charred.
- Place the tomatoes, mayonnaise, garlic, paprika and chipotle in a food processor and process until smooth, season with salt and pepper. Can be made 1 day in advance and refrigerated.
- Brush the potato slices on both sides with some of the oil and season with salt and pepper. Place the potatoes on the grill, close the cover and grill until lightly golden brown and just cooked through, about 2 minutes per side. Carefully transfer the potatoes to a platter and garnish with the parsley. Serve the aioli drizzled over the potatoes or on the side.
SOUR CREAM AND ONION-SPICED GRILLED TORNADO POTATOES

Steps:
- Prepare a grill for cooking over medium heat.
- In a bowl, whisk together the milk powder, Parmesan, chives, dill, onion powder, granulated garlic, parsley, salt and sugar. Mix thoroughly to combine.
- Place the olive oil in a separate bowl and mix in 1 tablespoon of the spice mixture.
- Insert a bamboo skewer lengthwise through the center of each potato. With a sharp paring knife, cut a potato in a spiral pattern all the way down to the skewer, beginning at the top of the potato with the knife set at a 15 to 20 degree angle. Rotate the potato as you cut until the entire the potato is cut through in a spiral pattern. Stretch the potato down the skewer. Repeat with the remaining potatoes.
- Set each skewer over a piece of aluminum foil. Brush each of the potatoes with a generous amount of the oil mixture, reserving a third for later. Wrap the potatoes in the foil, closing both ends so the oil cannot escape. Place on the grill and cook 8 minutes, then flip and cook 8 minutes more. Remove from the grill and let rest until cool enough to handle. (Leave the grill on.)
- Remove the skewers from the foil. Brush each potato with some of the remaining oil mixture and return to the grill until well browned, 2 to 3 minutes per side. Transfer to a platter and sprinkle each with more of the dry spice mixture. (Extra spice mixture can be stored in an airtight container at room temperature for up to 2 months.)
BAKED POTATOES ON THE GRILL
Turns out the best way to make a baked potato might be to not bake it at all. Grilling it yields the same fluffy interior with the bonus of an underlying hint of smoky flavor. Since the potatoes are cooked over direct heat, it's important to use heavy-duty aluminum foil. (In a pinch, you can use two layers of regular foil.)

- Preheat a grill to medium heat. Use a paring knife to poke each potato 4 to 6 times. Rub the potatoes with the olive oil, then generously season with salt and pepper.

- Preheat an outdoor grill for medium-high heat; lightly oil the grate.
- Cut two 12x18-inch pieces of aluminum foil and fold them in half to create two 12x9-inch rectangles. Spray one side of each piece with cooking spray. Arrange the potatoes over one sheet of prepared foil in an overlapping pattern, leaving 2 inches free on all sides. Sprinkle with the onion, green bell pepper, red bell pepper, and sliced mushrooms. Season with salt, pepper, vegetable flakes, and paprika to taste. Dot with the reduced fat spread. Place the second piece of foil over the potatoes with the greased side down. Seal the edges by creating several folds; poke 4 to 6 holes in the top to allow steam to escape.

- Combine the spices in a small bowl (cumin, garlic powder, salt and red pepper). Mix.
- Put the sweet potato slices in a medium bowl and drizzle with olive oil. Toss to coat. Sprinkle with the spices and toss to coat evenly.
- Heat a stove-top grill or a large skillet over medium high heat. Remove briefly from heat, coat with cooking spray, and return to the heat. (The original recipe called for a grill, but I just use a skillet.).
- Place sweet potato slices in the skillet, flipping occasionally, so that they are grilled crispy on both sides. They take about 10 minutes to cook as long as they are properly sliced to a thin 1/4-inch thickness.
- When cooked, places in a serving bowl and sprinkle with the cilantro, if using. (The first several times I made this I had no cilantro, so did without. In the meantime I've made it with cilantro a few times, but it is just fine without it if you don't have any.).
