Found this while searching the web for French recipes for ZWT 3, so haven't had the opportunity to try it yet. Sounds like an interesting twist for your average avocado.

Steps:

  • Steam the rice and let cool.
  • In small bowl, mix mayonnaise, mustard, salt & pepper, lemon juice, ketchup and tabasco.
  • Cut the avocados in half.
  • Scoop out the inside and set aside the skins.
  • In another bowl, blend together avocado pulp, crab meat, mayonnaise mixture and the cooled rice.
  • Fill each half avocado skin with the prepared mixture, sprinkle with chopped herbs and refrigerate until serving.

1 (12 ounce) can crabmeat
4 tablespoons mayonnaise
1 teaspoon prepared mustard
3 drops Tabasco sauce
1 tablespoon ketchup
1 tablespoon lemon juice
1 tablespoon finely chopped herbs
salt & pepper

This recipe was handed down from my grandmother. It is a family favorite. A great way to use those garden vegetables. To save time, I cut corn from the cob while other vegetables are cooking.

Steps:

  • In a large skillet over medium heat, cook bacon until evenly brown. Set aside, reserving 2 tablespoons bacon fat. Saute onion and green pepper in bacon fat until tender. Stir in tomatoes, green beans, salt, and pepper. Cover, and simmer for 15 minutes. Stir in corn, cover, and continue cooking until vegetables are tender, about 20 minutes.
  • In a small bowl, mix together flour and water. Stir into vegetables, and cook until thickened, about 2 minutes. Remove from heat, and stir in evaporated milk. Crumble bacon over top. Serve immediately.
