Spiced Rum Pecan Cookie Balls Recipes
SPICED RUM BALLS
Something of a holiday favorite around our friends and family. In fact, we get pretty competitive about whose balls are the best... The recipe is infinitely customizable. You can substitute vanilla wafers or graham crackers for the ginger snaps, walnuts for the pecans, and/or other liqueurs for the rum, and add spices or cocoa powder to the powdered sugar for extra fun. This is my favorite variant, though. My favorite rum to use in these is Gosling's Black Seal, though Pyrat is not bad. These are easy to make, but really sticky. The recipe makes 24-36, depending on how big your balls are.

Steps:
- Combine nuts, crumbs, honey, and rum.
- Chill about 15 minutes.
- Roll into small balls.
- Roll in powdered sugar to coat.
- Let sit a day or so before serving.
- Remind people that there is indeed booze therein, because, you know, there is.

- Preheat oven to 350 degrees F. Place pecans on a baking sheet and toast for about 6-8 minutes until browned and fragrant, stirring the pecans halfway through. Set aside to cool.
- Add the cookies to the bowl of a food processor and pulse into fine crumbs; transfer to a large bowl.
- Add the cooled, toasted pecans to bowl of the food processor and pulse into fine bits (don't over-process or you'll end up with paste!); transfer to the bowl with the cookie crumbs.
- Sift the 1 cup powdered sugar, 2 tablespoons cocoa powder, and salt over the bowl with the cookies/pecans and whisk everything together.

- In a large bowl combine the cookie crumbs, 1 cup (5oz/142g) pecans (preferably toasted), powdered sugar, cocoa, maple syrup, and rum.
- Once chilled, scoop the cookie mixture into balls. Using a tablespoon measure, scoop a level tablespoon of the mix then roll into a ball. Repeat the process until all of the balls are rolled.
- Once all of the balls have been rolled coat each one in the remaining 1/2 cup (2 ½oz/71g) pecans.
