- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

- Mix together crushed coriander and fennel seeds, oregano, brown sugar, pepper and salt; set aside. In a medium bowl place potato wedges and toss with oil to coat. Sprinkle evenly with seasoning mixture.
- Place potatoes in a single layer, without touching one another on the prepared baking sheet. Roast in middle of oven 15 minutes. Carefully turn wedges over with a spatula and roast until tender and slightly golden, about 15 minutes more.

SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES
What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

- For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
- Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
- For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
- For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.
- For the sweet potato fries: Pour the oil to a depth of 3 inches in a Dutch oven. Heat the oil to 325 degrees F. Line wire racks with paper towels.
- Stir together the cornstarch and seltzer water in a medium bowl. Dip the sweet potatoes in the cornstarch mixture in batches until coated. (The coating will be thin. Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.
- Increase the oil temperature to 350 degrees F.
- Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
- Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
SPICY SWEET POTATO FRITES
Steps:
- Peel potatoes and cut into 1/4-inch matchsticks. Heat oil to 300 degrees F. "Blanch" fries for 2 minutes and let cool. Heat oil to 350 degrees F. Fry for 3 minutes, or until fries are brown and rise to the top. Sprinkle with the spice blend.
- Toss all the spices together in a large bowl. Store in an airtight container.

- Peel the sweet potatoes. If they are average size, cut them in half lengthwise. Lay each half flat on the cutting board and cut it into four slices. These should be between 1/4 and 1/2-inch slabs.
- Put the sweet potatoes in a large mixing bowl. Sprinkle on the seasonings and then pour on the olive oil.
- Use your clean hands to toss the potatoes with the other ingredients until all is evenly distributed.
- Set aside and allow the potatoes to marinate for 1/2-hour or more, depending upon the timing of your meal.
- When you are ready to cook, spray a shallow sheet pan with a light coat of oil to prevent sticking and then pour out the potatoes, distributing them evenly and avoiding any stacking.
- Place the pan on the middle rack of an oven preheated to 400 degrees Fahrenheit. Bake for about 30 minutes or until the fries are looking crisp. Serve hot.
