HOT SPICED WINE

A quick version of mulled wine, this party drink highlights a wonderful blend of spice and citrus. From Christmas with Southern Living 2004 cookbook.

Hot Spiced Wine image

Steps:

  • Place first 3 ingredients on an 8" square of cheesecloth; tie with string. Place spice bag in a Dutch oven. Add red wine and remaining 5 ingredients; bring to a simmer over low heat (do not boil). Keep at a simmer while serving. Ladle into mugs.
  • Note: For a nonalcoholic version, omit wine and substitute more apple cider.

2 (3 inch) cinnamon sticks
2 teaspoons whole cloves
1 teaspoon whole allspice
6 cups fruity red wine (such as Beaujolais or Pinot Noir)
6 cups apple cider
3/4 cup sugar
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced

Steps:

  • Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Place in a 3-qt. slow cooker., Add remaining ingredients. Cook, covered, on low until flavors are blended, 4-5 hours. Discard spice bag. Serve warm.

1 gallon cheap burgundy

  • In a saucepan, combine 1 bottle full-bodied red wine, 3 tbsp.
  • honey, 2 cinnamon sticks, 2 tbsp.
  • cardamom seeds, 1 tbsp.
  • black peppercorns, 1 sliced orange, 1 sliced lemon and 1/2 cup sugar.
  • Simmer 15 minutes.
  • Pour into a mug garnished with a cinnamon stick.

Spiced Orange Wine image

Steps:

  • Bring all ingredients except oranges to a boil (reserve wine bottles and corks), stirring until sugar has dissolved.
  • Remove zest from oranges in a continuous spiral using a vegetable peeler and cut off any white pith with a paring knife.
  • Reserve oranges for another use and divide zest between empty wine bottles.
  • Fill bottles with orange wine and cool, leave uncorked for1 hour.
  • Cork bottles, then chill at least 5 hours.

  • Orange wine can be chilled up to 1 week.

Mulled Spiced Wine image

Steps:

  • Bring the wine, port, water, vanilla, cardamom, cloves, cinnamon, allspice, orange peel or whole orange cut in half, lemon peel or whole lemon cut in half, hibiscus flowers and sugar to a simmer in a nonreactive saucepan.
  • Or place in a slow cooker on low for 1-2 hours.
  • Simmer the mixture slowly for 15 minutes.
  • Strain and place into Heat resistant punch bowl or keep in crock pot and keep on low.
  • Place 1 blanched almond and several raisins or fresh cranberries in the bottom of each punch glass.
  • Pour the warm wine mixture over and serve.
