Spiced Applesauce image

Steps:

  • Peel, core, and slice apples.
  • In a large pot, bring apples, lemon juice, spices, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
  • Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
  • Let cool, then transfer applesauce to airtight containers.

  • Preheat oven to 350°. In a large bowl, whisk 2 cups flour, baking powder, salt, spices and baking soda. In another bowl, whisk eggs, applesauce, sugars, melted butter and orange zest until blended. Add to flour mixture; stir just until moistened. In a small bowl, toss cranberries and candied citron with remaining flour; fold into batter., Transfer to 2 greased 8x4-in. loaf pans.   • In a large bowl, beat the applesauce, sugar, shortening and eggs. Combine the flour, cocoa, baking soda, salt, cinnamon, nutmeg, allspice and cloves; gradually beat into applesauce mixture until blended. Stir in the raisins, chocolate chips and walnuts. , Pour into a greased 13x9-in. baking pan. Combine topping ingredients and sprinkle over batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:

  • Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
  • Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.

Spiced Apple-Pear Sauce image

Steps:

  • Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
  • Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)

Steps:

  • 1. Combine the cream, apple juice, star anise, ginger, cloves, cinnamon sticks, and nutmeg in a small saucepan and bring to a simmer. Remove from the heat and let steep for at least 20 minutes. Strain the mixture into a clean small saucepan and place back over low heat while you make the caramel.
  • 2. Combine the sugar, 1/2 cup water, and the vinegar in a medium saucepan over high heat and cook without stirring until a deep amber color, 8 to 10 minutes. Slowly and carefully whisk in the warm cream mixture a little at a time, and continue whisking until smooth. Add the apple schnapps and cook for 30 seconds longer. Transfer to a bowl and keep warm. The sauce can be made 2 days in advance and refrigerated. Reheat over low heat before serving.

SPICY GINGER APPLESAUCE CAKE WITH CREAM CHEESE FROSTING

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.
