POTATO AND GROUND BEEF GRATIN
Comfort food at its finest! Don't pass on this casserole of beef and potatoes in a creamy Cheddar sauce.

Steps:
- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 10-inch skillet, cook beef, salt and pepper over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
- Meanwhile, in 3-quart saucepan, melt butter over medium-low heat. Add onion; cook about 2 minutes, stirring occasionally, until tender. Stir in flour. Cook 1 to 2 minutes, stirring constantly, until bubbly; remove from heat. Stir in thyme.
- Stir milk into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 2 cups of the cheese until melted.
- Spread half of the potatoes in baking dish. Top with beef; spread remaining potatoes over beef. Pour cheese sauce over potatoes.
- Cover with foil; bake 45 minutes. Sprinkle remaining 1 cup cheese over potatoes. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly and potatoes are tender. Let stand 5 minutes before serving.

SPICY POTATO GRATIN
Who doesn't love cheesy baked potato casseroles? This version spices things up a bit by using smoky chipotles in adobo sauce and fragrant Gruyere in the cheese sauce. Because a crunchy topping is just about mandatory, I sprinkle the whole thing with crispy panko bread crumbs. A mandoline will make quick work of slicing the potatoes.

- Preheat the oven to 375 degrees F. Grease a large casserole dish with some butter.
- In a saucepan, melt the butter over medium-high heat. Whisk in the flour to form a smooth paste. While whisking, slowly add the milk in a steady stream to form a smooth sauce. Bring the sauce to a simmer, whisking to prevent the formation of any lumps (be sure to get into the corners of the pan so nothing burns). Season with salt and pepper. Add the nutmeg and cheese, whisking until thick and smooth. Whisk in the pureed chipotles.
- Put the potatoes in a large bowl and season with salt and pepper. Pour in the cheese sauce and toss to thoroughly coat the potatoes. Evenly arrange the potatoes in the greased casserole dish, sprinkle with the bread crumbs, and cover tightly with aluminum foil.
- Bake until the potatoes are easily pierced with a knife, about 1 hour. Uncover and bake until the top is golden brown and crisp, about 15 minutes. Remove from the oven and let sit for 10 minutes before serving.
BAKED SEAFOOD AU GRATIN
This was my Mom's favorite seafood recipe, she is now 88, I am 60 and this is my all time favorite seafood recipe also. I have had guests, who, when invited to dinner, specifically request this to be served.

- In a heavy skillet, saute the onion and the pepper in 1/2 cup of butter. Cook until tender. Mix in 1/2 cup of the flour, and cook over medium heat for 10 minutes, stirring frequently. Stir in crabmeat, remove from heat, and set aside.
- In a large Dutch oven, bring the water to a boil. Add the shrimp, scallops, and flounder, and simmer for 3 minutes. Drain, reserving 1 cup of the cooking liquid, and set the seafood aside.
- In a heavy saucepan, melt the remaining 1/2 cup butter over low heat. Stir in remaining 1/2 cup flour. Cook and stir constantly for 1 minute. Gradually add the milk plus the 1 cup reserved cooking liquid. Raise heat to medium; cook, stirring constantly, until the mixture is thickened and bubbly. Mix in the shredded Cheddar cheese, vinegar, Worcestershire sauce, salt, pepper, and hot sauce. Stir in cooked seafood.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish. Press crabmeat mixture into the bottom of the prepared pan. Spoon the seafood mixture over the crabmeat crust, and sprinkle with the Parmesan cheese.
- Bake in the preheated oven for 30 minutes, or until lightly browned. Serve immediately.

I had some boxed Au Gratin potatoes and some ground beef and really didn't know what to do with it,so I started to look through a lot of recipes. ( and I mean a lot :) ) And then got an idea from one of those "TOH" Ground Beef grocery store cookbooks.So I changed a few things around, such as seasonings and the way it was prepared.If you want you can change the amounts of the seasonings to suit your own personal tastes.Last but not least, I want to thank Chef#59686 and Chef#101376 for coming up with the name for this recipe :) .Submitted to "ZAAR" on October 16th,2008

- In a medium non-stick skillet, over medium heat, add the first 4 ingredients and cook until meat is no longer pink and onion is tender.

This is something I am throwing together for dinner tonight with things I happen to have on hand. I like to make "bakes" when the weather is cold and it's a bit chilly here in MI today.

- Preheat oven to 400 degrees farenheit.
- Cut the roast in small strips (fajita style), and brown it in a hot pan.
- While the meat is browning shred the cheese, slice the tomatoes, chop the green pepper, and dice the onion.
- After meat is browned, drain off any fat and add taco seasoning along with a half cup of water. Bring up to a simmer.
- Once everything is prepared, lightly grease a 13x9 baking dish and layer ingredients starting with tortillas, then a layer of meat, followed by the tomatoes, green peppers, and onions. Repeat layering, reserving the cheese for the top.
- Cover pan with aluminum foil and bake for 45 minutes Remove foil and continue to bake uncovered for additional 15 mins, until cheese just begins to brown.
- You could also add a can of bean (black beans or pinto) as an additional layer if you wish. I would have included in the recipe but I don't happen to have any on hand.

- Heat oven to 350°F
- Lightly grease 2 1/2 or 3 quart casserole.
- In large skillet, brown ground beef and onion; drain well. Add tomato sauce, garlic powder, 1/4 teaspoons salt and pepper;.
- blend well.
- Spoon into greased casserole. Spoon corn evenly over meat mixture.
- In medium saucepan, combine water, butter and 1/2 teaspoons salt; bring to a rolling boil. Remove from heat. Stir in milk and potato flakes with fork until potatoes are desired consistency. Stir in green chiles. Spread potato mixture evenly over corn. Sprinkle with cheese.
- Bake at 350F for 30-35 minutes or until cheese is melted and bubbly around edges.
- Let stand 5 minutes.
- Top with chopped tomato.

- Peel and dice the sweet potato into 1/2 inch cubes. Remove the ribs of the greens, tear them in half lengthwise and cut into 1/2 inch strips.
- Preheat oven to 350 degrees.
- Heat oil over medium high heat.
- Sauté the onion and salt for about 2 minutes or until onion begins to soften then add the the garlic and sauté until the onion is almost translucent, about 3 to 4 minutes more.
