SPICY CARDAMOM SALMON (NORTH AFRICAN INSPIRED)

This original recipe was created for the ZWT6 Mixing Pot Challenge, hosted by the Fish & Seafood Forum. Team X-tra Hot Dishes has lived up to it's name and just like the influential flavors of North Africa, we are spicy and energetic with a balance of zesty sweetness mixed in. This easy, yet bold-flavored rub for salmon shows off some of our best qualities!

Spicy Cardamom Salmon (North African Inspired) image

Steps:

  • Preheat oven to 350°F and liberally spray a casserole dish with non-stick cooking spray.
  • Place the salmon fillets, skin side down, in dish and set aside.
  • In a small bowl, combine the remaining ingredients (except fresh cilantro) and stir well to form a slightly dry paste.
  • Gently rub the paste onto the salmon and bake, uncovered, at 350° for 15-20 minutes or until fish flakes easily with a fork.
  • Garnish with fresh cilantro, if desired.

12 ounces salmon fillets (2 fillets, 6 ozs each, fresh or thawed)
1/2 teaspoon cardamom
1/4 teaspoon coriander
1/2 teaspoon dried cilantro
1/4 teaspoon cumin
1/8 teaspoon cayenne
1/2 teaspoon celery seed
1/4 teaspoon sea salt
1 1/2 teaspoons lemon zest
1 garlic clove, minced
1 teaspoon olive oil
4 tablespoons cilantro, fresh (optional)

SPICY GARLIC SALMON

This is an unbelievably delicious and quick salmon recipe. You can play around with the ingredients: add fresh basil leaves instead of the chili or balsamic instead of the lemon juice. The wholegrain mustard is essential. You are guaranteed to love this one! Serve with a green salad, and enjoy!

Spicy Garlic Salmon image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a medium baking dish with aluminum foil. Lightly grease foil.
  • With a mortar and pestle, grind together the garlic, chile pepper, and olive oil. Mix into a thick paste with the mustard, lime juice, salt, and pepper. Place the salmon fillets in the prepared baking dish, and coat with the paste mixture.
  • Bake salmon 12 to 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

Sauteed Bananas With Cardamom Praline Sauce image

Steps:

  • Heat 2 tablespoons butter in a large heavy skillet over moderately high heat until foam subsides, sauté bananas, cut sides down first, turning over once, until golden, 1 1/2 to 2 minutes total.
  • Transfer evenly with a slotted spatula to 4 dessert bowls.
  • Melt remaining 2 tablespoons butter in skillet over moderate heat, add brown sugar, cream, and cardamom. Simmer, stirring occasionally, until sauce is slightly thickened, about 2 minutes.
  • Remove from heat, stir in lime juice and toasted pecans.
  • Scoop ice cream into dessert bowls on top of bananas, spoon the sauce over the top of ice cream.

Steps:

  • In a bowl, stir together all the ingredients.
  • Cover & chill in the refrigerator for 1 hour.
  • Can be used to baste four 8-ounce portions of salmon OR as a sauce, once the salmon has been baked. Also works as a sweet & spicy dip for other seafood.

Garlic & Herb Marinade for Shrimp (Gluten Free) image

Steps:

  • Mix all ingredients except the lemon wedges & parsley springs in a zip-lock bag.
  • Marinate for 20 minutes in the refrigerator.
  • Grill on high heat for 5-6 minutes turning to char all sides.
  • Serve garnished with lemon wedges and parsley springs.

Spicy Baked Salmon image

Steps:

  • Combine all seasoning ingredients and spread over the surface of the salmon.
  • Bake (skin side down) in a 350 oven for 20 to 40 minutes depending on the thickness of the salmon.
  • If you're grilling it, do so over high heat for 10 to 15 minutes depending on thickness.
  • Do not turn the salmon over.
