4 MINUTE SPICY GARLIC SHRIMP

Steps:
- Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.
SPICY CHORIZO & SHRIMP SAUTE
Steps:
- Salt shrimps and set aside for 15 minutes. Pat dry. Heat skillet over medium high. Add oil, chorizo and onions and saute for 2 minutes or until chorizo is slightly browned on the edges. Add garlic and shrimp and saute about 5 minutes. Pour wine over mixture and sprinkle with sugar. Bring wine to a boil. Season with salt & pepper. Serve over saffron rice.

- Combine curry paste, fish sauce, sambal and chili sauce in a medium bowl; add shrimp, tossing to coat. Place a large nonstick skillet over medium-high heat until hot. Add oil, and heat till smoking then add the shrimp mixture, and sauté for 2 minutes. Add scallions; cover, and cook for 3 minutes. Stir in sweet soy sauce and coconut milk. Cook for 3 minutes or until thoroughly heated and the shrimp is cooked through. Add cilantro and serve.

- In a large skillet, heat 2 T oil over medium heat.
- Add the chorizo and cook, stirring, until lightly browned, about 4 minutes.
- Using a slotted spoon, transfer to a paper-towel-lined plate.
- Add the remaining 2 T oil, the garlic and red pepper flakes to the skillet and cook, shaking the pan a bit, until the garlic is lightly golden.
- Increase the heat to high, add the shrimp and stir to coat.
- Add the wine and cook, stirring, until the pan is nearly dry, 2-3 minutes. (You do want some pan juice for the finished dish.).
- Return the chorizo to the pan, season with salt and pepper and sprinkle with the parsley.
- Cook until the chorizo is hot and the shrimp is opaque, about 2 minutes.
- Place the toasts on 4 plates. Spoon the shrimp, chorizo and pan juices on top.

- For the polenta: In a Dutch oven or large heavy-bottomed pan, bring the stock, water, milk, salt and pepper to a boil over high heat. Slowly whisk in the cornmeal and reduce heat to low. Simmer uncovered, stirring frequently, for 25-30 minutes.
- While the polenta is cooking, heat the oil over medium heat in a skillet. Add the paprika, coriander, cumin and salt. Stir to create a paste and allow to cook until fragrant, about 1 minute. Add the chorizo and cook, stirring, until browned, about 2 minutes. Remove chorizo from the pan to a plate. If skillet seems dry, add a bit more oil. Add the garlic and cook for about 1 minute, stirring. Pour the water or stock in to the pan to deglaze, using a spatula to scrape up and stir any brown bits. After the liquid has reduced slightly, add the shrimp. Cook for about 2 minutes per side, or until pink and opaque. Remove the pan from the heat and return the cooked chorizo to the pan, stirring well. Set aside until ready to eat.
- When polenta is ready, remove from heat and stir in the butter. Taste for seasoning and add additional salt and pepper, if desired.
- To serve, spoon polenta in to bowl and top with the chorizo and shrimp. Garnish with chopped cilantro or parsley, if desired.
