SPICY CITRUS SALAD

Cooking is a favorite hobby of mine. Everyone jokes about my numerous cookbooks and five recipe boxes! I'm always on the lookout for something new and flavorful, so when I received this salad recipe from my nephew's wife, I just had to try it. The unique blend of flavors was a hit!

Steps:

  • In a small bowl, whisk together the first five ingredients. Stir in the oranges, parley and olives. Cover and refrigerate for 1 hour., Just before serving, place greens in a salad bowl. Spoon dressing over top and toss to coat.

Spinach and Citrus Salad with Sweet and Spicy Pecans image

Steps:

  • Put the spinach and green onions in large salad bowl and sprinkle with the halved citrus supremes. In a small saute pan over medium heat, add the butter and sugar and stir until the butter is melted. Add the pecans and toss until the pecans begin to brown. Stir in the rosemary and cayenne and stir just a few seconds to release the aroma. Remove from the heat and season with salt and pepper, to taste. Sprinkle the pecans on the salad while still warm. Drizzle the dressing over salad and serve.
  • In a small bowl, add all the ingredients and whisk until emulsified.

Citrus Breakfast Salad with Spicy Chile Granola image

Steps:

  • Preheat oven to 350°F. In a small pot over medium heat, bring oil and red-pepper flakes to a simmer, then remove from heat. Swirl in cinnamon and let stand a few minutes (the longer it sits, the spicier it will be). Strain into a large bowl though a fine-mesh sieve; remove 1 tablespoon or so of spicy oil and set aside.
  • To that same large bowl with spicy oil, add oats, buckwheat, seeds, almonds, maple syrup, kosher salt, and egg whites. Combine with a wooden spoon until everything is mixed and moistened. Transfer to a parchment-lined rimmed baking sheet and bake, rotating and mixing every 15 minutes, until golden brown and fragrant, 25 to 30 minutes.
  • Arrange citrus on your plate or plates. Scatter with a handful of granola and top with a spoonful of yogurt (use the back of a spoon to give it a nice swoop), if desired. Drizzle with reserved spicy oil and sprinkle with flaky salt. Save any remaining granola in an airtight container up to 3 weeks.

Steps:

  • Wash, trim and dry the spinach.
  • Cut the red pepper in to decorative strips.
  • Make the dressing: In a small pan, combine the juices and the oil over medium heat.
  • Heat, stirring briskly until bubbling and the oil begins to emulsify with the juices.
  • Add the cream cheese and stir until it is entirely melted and incorporated.
  • Add the chili flakes and take off the heat.
  • Arrange the spinach and the red pepper on 2 plates.
  • Sprinkle the sunflower seeds on top of the salads and around the edge of the plate.
  • (Can be made ahead of time up to this point).
  • Strain the dressing through a fine seive.
  • Return to the pan and reheat if it is not still warm.
  • Pour hot over the salads and enjoy immediately.

  • Mix 2 teaspoons orange-pineapple juice and the cornstarch; set aside.
  • Mix 1/4 cup orange-pineapple juice, the sugar, black beans, vinegar, soy sauce, sesame oil and chilies in 10-inch skillet or wok; heat to boiling. Add shrimp; stir-fry 3 to 5 minutes or until shrimp are pink and firm.
  • Stir in cornstarch mixture. Cook and stir about 30 seconds or until thickened. Stir in onions.

  • To make Dressing:.
  • Mix all ingredients together in a bowl. Taste for balance of sweet, sour, salty, and spicy, aadjusting seasonings as needed. Set aside.
  • To make Salad:.

  • For scallops:
  • Preheat broiler. Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Stir in garlic. Sprinkle scallops with salt and pepper. Cook scallops until browned on 1 side, about 1 minute. Turn scallops over and cook 1 minute. Spoon 1 teaspoon glaze atop each scallop. Place scallops in broiler until glaze browns, about 1 minute.
