HOT CREOLE SHRIMP DIP
I came across a recipe for hot crawfish dip, and it sounded delicious, but we don't have a lot of crawfish available in my area. However, I'm a big fan of shrimp, so I used that instead. This Creole shrimp dip has become a family favorite. You can increase the heat with your favorite hot sauce or add a bit of acidity with a squeeze of lemon. -Jill Burwell, Renton, Washington

- In a Dutch oven, melt butter over medium heat. Add green onions and green pepper; cook and stir until tender, 3-4 minutes. Add shrimp, pimientos, garlic and Creole seasoning. Cook and stir until heated through. , Stir in cream cheese until melted; sprinkle with parsley. Serve with baguette slices or crackers.

SPICY SHRIMP CREOLE
"For more than 35 years, this has been our favorite shrimp dish," says Sharon Larson of Knoxville, Illinois. The tender shrimp combined with a slightly spicy chunky tomato and green pepper mixture makes a hearty portion of this classic.

- In a large skillet, saute the onion, celery and green pepper in oil until tender. Add garlic; saute 1 minute longer. Stir in the tomatoes, tomato sauce, Worcestershire sauce, sugar, salt, chili powder and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. , Add shrimp; cook 4-5 minutes longer or until shrimp turn pink. Serve with rice if desired.

SPICY SHRIMP CREOLE
Steps:
- Heat oil in a Dutch oven on medium heat. Saute celery, onions, and garlic in the Dutch oven until the onions are pearly white and the celery has begun to soften.
- Mix sugar, flour, salt, pepper and cayenne pepper into the Dutch oven. Add crushed tomatoes and tomato sauce, both pieces of bay leaf, and hot sauce. Bring the mixture to a boil, then turn the heat to low.
- Let the mixture simmer for 30 minutes, stirring occasionally.
- Approximately 15 minutes before serving, add shrimp to the pot and stir well. If necessary, raise the temperature to medium-low to ensure the Creole is bubbling but not burning. Scoop out the bay leaf halves before serving. Serve when the shrimp is pink and thoroughly cooked.

- In a small bowl, mix together freshly ground black pepper, Creole seasoning, garlic powder, onion powder, and cayenne pepper. Reserve 1 tsp of this mix for veggies.
- Cut each shrimp into 2-3 pieces (depending on the size of the shrimp). Transfer chopped shrimps to the bowl, drizzle with 2 tbsp olive oil, and season with the mix of the seasonings (excluding reserved 1 tsp). Toss to coat. Set aside.
- In a skillet, heat 2 tbsp olive oil. Then, add diced celery, diced shallot, diced bell pepper, and chopped jalapeno pepper. Saute for 4-5 minutes. Then, add reserved 1 tsp seasonings and minced garlic clove. Cook for 1 minute or until the garlic is fragrant. Then, add chopped shrimps. Cook for up to 3 minutes. Turn off the heat.

- Heat the olive oil over medium heat in a medium saucepan. Add the onion, garlic, celery and peppers and saute until the onion is soft and translucent and the rest of the veggies are tender. Stir in the cream cheese, sour cream and shredded cheeses until the cheeses melt and blend together.
- Meanwhile, remove the tails from the shrimp and put in a small food processor. Pulse a few times to shred the shrimp.
- Add the shrimp and seasonings along with the tomato powder or hot sauce and jalapeno to the dip and stir to mix. Taste and add more hot pepper to your liking. Serve immediately – or chill and serve cold with your choice of dippers. This dip is delicious either hot and cold!
