SPICY GRILLED SHRIMP
Chili paste and fish sauce give these shrimp a Thai-inspired flavor and a crowd-pleasing reputation. Both the paste and sauce are available in the ethnic-food aisles at many supermarkets, in Asian grocery stores, and online.

Steps:
- Soak 12 wooden skewers in water for 30 minutes to prevent charring.
- Meanwhile, make the sauce: Bring sugar and lime juice to a simmer in a small saucepan. Cook, stirring, until sugar dissolves, about 2 minutes. Remove from heat; stir in lime zest, chili paste, and fish sauce. Season with salt.
- Make the shrimp: Heat grill to high. Brush grates with oil. Thread 3 shrimp onto each skewer; season with salt. Divide sauce in half; reserve half for serving. Grill shrimp for 1 minute; brush with sauce. Flip, and grill for 1 minute more; brush with sauce again. Flip, and grill, brushing occasionally with sauce, until opaque, 1 to 3 minutes more. Serve with reserved sauce.
SPICY GRILLED SHRIMP SKEWERS
I suggest to use fresh shrimp for this as frozen thawed will create a watery marinade, do not marinade for longer than 30 minutes or the acid in the lemon juice will "cook" the shrimp, adjust the cayenne to suit heat level, I have left the Tabasco as optional you may add it or omit --- this shrimp is very good!

Steps:
- In a small bowl crush the garlic with coarse salt; mix in cayenne pepper and paprika.
- Add in olive oil and lemon juice; mix until combine, then add in Tabasco if using.
- In a large bowl toss the shrimp with the garlic oil until evenly coated.
- Cover and refrigerate for 30 minutes.
- Meanwhile soak the wooden skewers in cold water for 30 minutes.
- Preheat grill to medium heat, then lightly oil the grill grate.
- Thread the shrimp onto the wooden skewers.
- Cook the shrimp for 2-3 minutes per side or until opaque.
- Serve with lemon wedges.

AMAZING SPICY GRILLED SHRIMP
Steps:
- Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
- Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade and seal the bag. Refrigerate for 2 hours.
- Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
- Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

Steps:
- Soak wooden skewers in water for about 30 minutes prior to preparing shrimp.
- Peel and devein shrimp.
- Rinse shrimp with cool water, and set aside, to drain excess water.
- Whisk together all ingredients except for shrimp.
- Let mixture stand for about 5 minutes.
- Add shrimp to mixture and let marinate for approximately 30 minutes.
- Prpare grill on medium-high heat.
- Thread shrimp on wooden skewers.
- Remove shrimp from marinade and place on grill.
- Cook for about 2 minutes per side or until pink and cook through.

SPICY GRILLED SHRIMP

- Combine the ingredients for the marinade. Add the shrimp, cover, and chill for approximately 3 hours.

- Whisk first 8 ingredients in small bowl.
- Thread 6 shrimp onto each of six 10- to 12-inch-long metal skewers. Place skewers in 15x10x2-inch glass baking dish. Spoon all but 1/4 cup marinade over shrimp; turn to coat. Cover and chill shrimp and reserved 1/4 cup marinade at least 30 minutes and up to 2 hours.
- Prepare barbecue (medium-high heat). Grill shrimp with some marinade still clinging until just opaque in center, about 2 1/2 minutes per side. Arrange skewers on platter. Spoon reserved 1/4 cup marinade over and serve.

- Peel and devein shrimp. Place in bowl with jalapeno, juice of 1/2 a lime and olive oil. Toss to coat and let sit for 15 minutes. In separate bowl combine cilantro, avocado, red pepper, and onion. Add juice of 1 lime, cayenne and salt. Toss to coat. Cook off shrimp on grill or on stove top in a skillet. Add shrimp to salad and toss to coat. Serve on bed of lettuce.
