SPICY JALAPENO BITES

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cream cheese, Parmesan cheese, egg yolks, jalapeno peppers, hot sauce, and garlic powder in a bowl. Mix to form a paste. Shape into balls and roll in bread crumbs until breading is about 1/4 inch thick. Place balls on an ungreased baking sheet.
- Bake in the preheated oven until golden brown, 10 to 15 minutes. Serve warm or freeze in a resealable plastic bag for later.

JALAPEñO BITES
These are a bit reminiscent of stuffed jalapeño peppers but much easier to make. I found this in the Junior League Celebrations cookbook.

Steps:
- Preheat oven to 350°F.
- Combine the cream cheese, Parmesan, jalapeño peppers and egg yolks in a bowl and mix to form a paste.
- Shape a 1/2 tablespoonful at a time into 1/4-inch rounds and roll in the bread crumbs.
- Place on an ungreased baking sheet and bake for 10-15 minutes or until golden brown.
- Serve warm.

JALAPENO BITES
Steps:
- Preheat the oven to 350 degrees F.
- Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.
SPICY CHEESE BITES

Steps:
- Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
- Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
- When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

BATTERED GROUPER BITES WITH JALAPENO TARTAR SAUCE
This is kind of like a hush puppy with the fish inside of it!I got this from a Walmart card! The recipe calls for hushpuppy mix, but the computer won't let me say it, so I have put biscuit mix. Mexico, Spain, the South, all use these ingredients!

Steps:
- Stir together the mayonnaise, green onions, jalapenos, hot sauce, lemon juice, salt and red pepper in a medium bowl. Cover and chill until ready to serve.
- Stir together hushpuppy mix and milk in a medium bowl.
- Pour oil into a large deep skillet to a depth of 1/2". Heat oil to 350*F. Dredge fish in flour then in hushpuppy mix.
- Place fish in oil and fry in batches 3 to 4 minutes on each side or until golden. Serve with sauce. Enjoy!

- Mix cream cheese spread and cheddar until blended.
- Flatten bread slices with rolling pin; spread with butter. Turn over; spread with cream cheese mixture. Roll up tightly. Cut in half. Roll, 1 piece at a time, in Parmesan until evenly coated. Place on baking sheet sprayed with cooking spray.
- Bake 12 to 14 min. or until golden brown.
