SPICY MINCE WITH RICE & SPINACH

This recipe is on a sheet cut out from a magazine years ago. I think it's probably family circle, but not certain. Made it quite a lot for a while, but then stopped. We seem to be returning to our old favourites here for a while.

Spicy Mince With Rice & Spinach image

Steps:

  • Heat the oil in a LARGE pan, add the onion and fry for 3- 4 minutes until softened.
  • Add the garlic and spices and fry for another 3 minutes.
  • Add the minced beef and cook for 4 to 5 minutes or until all the meat has browned.
  • Add the stock and bring to the boil.
  • Cover and simmer for 40 minutes until all the meat is tender.
  • MEANWHILE cook the rice in a pan of boiling water for 10- 12 minutes until just tender.
  • Add the spinach to the rice and cook for just 30 seconds.
  • Drain well and stir rice and spinach mixture into the minced beef mixture, together with the sultanas and almonds.
  • Transfer the mixture to a warmed serving dish and serve with naan breads.

4 tablespoons oil
1 large onion, sliced
3 garlic cloves, crushed (I use the lazy garlic in a jar, 3 tsp)
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 1/4 teaspoons ground coriander
1 1/4 teaspoons garam masala
1 1/2 lbs ground lamb (I use whichever mince I have on hand) or 1 1/2 lbs ground turkey (I use whichever mince I have on hand)
19 fluid ounces beef stock
12 ounces basmati rice
6 ounces spinach, roughly shredded
4 ounces sultanas (I leave these out by preference)
2 ounces whole almonds

ONE PAN SPICY RICE

This simple rice dish is a useful backup - it needs practically no preparation and uses storecupboard ingredients

One pan spicy rice image

Steps:

  • Heat the oil in a large nonstick pan that has a lid, then fry the garlic and curry paste over a medium heat for 1 minute, until it smells toasty.
  • Tip the rice into the pan with the stock, chickpeas and raisins and stir with a fork to stop the rice from clumping. Season with salt and pepper, then cover and bring to the boil. Reduce to a medium heat and cook for 12-15 minutes or until all the liquid has been absorbed and the rice is tender.
  • Squeeze the excess water from the spinach with your hands. Tip it into the pan along with 2 tbsp of hot water and fluff up the rice with a fork, making sure the spinach is mixed in well. Toss in the cashews. Serve drizzled with natural yogurt if you like.

Jamie's Spicy Mince Linguine image

Steps:

  • Half fill a saucepan with water and bring to the boil. Crumble in the stock cube and add the linguine. Cook as per the pack instructions.
  • Heat the oil in a large frying pan, add the garlic and ginger and cook for 1 minute. Add the spices and cook for another minute. Add the mince and cook until completely brown.
  • Add the tomatoes, sweetcorn and spinach to the mince along with 250ml of the pasta stock water. Bring to the boil and then simmer for around 15 minutes, stirring every now and again, until the liquid has reduced and you are left with a silky mince mixture. Add ground black pepper to taste should you need it.
  • Drain the pasta and divide between two plates, top with the mince mixture and sprinkle the parmesan over the top to finish then serve immediately with garlic bread.
