TOMATO AND PEPPER SIRLOIN STEAK

- In a large bowl or shallow dish, combine flour, salt and pepper. Add beef slices, a few pieces at a time. Toss gently to coat., In a Dutch oven, heat oil over medium-high heat. Brown beef in batches. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes; bring to a boil. Reduce heat. Simmer, covered, stirring occasionally, until meat is tender, 10-15 minutes., Stir in green peppers, broth and Worcestershire sauce; simmer, covered, until peppers are tender, 10-15 minutes. Serve with rice.

- Sprinkle beef with salt and pepper. In a large skillet, cook beef in oil until no longer pink; remove and keep warm. In the same skillet, saute green pepper and onion until tender. Add garlic; cook 1 minute longer., Dissolve bouillon in hot water; stir into skillet with tomatoes. Return beef to the pan; bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until meat is tender., Combine cornstarch and cold water; stir into meat mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with noodles if desired.

SMOTHERED STEAK
A good, good for you, easy Steak recipe. I used my electric skillet for this dish.

- 1. I used an electric skillet for this dish. Add a little olive oil to skillet and brown steak on both sides. Add about 2 cups of water, celery and onion (you can add some sliced carrots too if preferred). Cover with lid and simmer on very low. On the electric skillet I turn the knob till the light just comes on, it will then cut off and on and as it simmers. Check skillet about every 30 minutes and turn steak and add more water if needed. When steak is done you want 2 cups of broth. Cook till will depend on thickness of steak. My steak was about 1-1 1/2" thick. Most any cut of steak will work.
- 2. Once steak is tender (I wanted mine to the shredded point) remove steak, veggie and broth. Melt 1/4-1/2 c of butter and add the same amount of flour to make a roux. Let flour brown just a little to remove the raw taste. Add broth back to pan and mix well and allow to thicken. Add steak back into gravy and I used a potato masher to "smash" my steak and shred it.
- 3. Serve over mashed potatoes, rice or bread for an open face steak sammie.

Steps:
- Cut beef across grain into thin strips.
- In a bowl combine soy sauce, garlic, paprika, ginger, and oil.
- Add the beef to bowl and stir to coat.
- Cover bowl and let it stand 30 min at room temperature.
- In the meantime, slice vegetables.
- In a large wok or frying pan, heat 1 Tbsp oil.
- Add the beef and cook over med/high heat until browned.
- Remove meat.
- Add vegetables (except tomatoes) to the pan.
- Cook vegetables until tender crisp.
- Return meat to the pan with the vegetables.
- Mix cornstarch with water and add to pan.
- Cook until thickened.
- Add the tomatoes and heat through.
- Add salt and pepper to taste.
- Serve over cooked rice or noodles.

- 1. Freeze Sirloin Tip steaks partially so it can be sliced easily into thin slices. I like to slice steaks on the bias.
- 2. These are the main spices. plus the addition of paprika.
- 3. Slice the peppers and onions into desired size. Set aside until needed.
- 4. Next combine all of the spices in a small bowl then blend together and sprinkle liberally over sliced steak. Allow to sit at room temperature for at least 45 minutes to allow the flavors to blend together.
- 5. In the meantime Cook rice according to package directions, and set aside till needed after meat has finished cooking.
- 6. Add olive oil to large skillet, and heat over medium high heat, add enough of the thin sliced meat to cover bottom of skillet, and brown on all sides. Do not over crowd skillet, remove to a large platter. Repeat as needed until all of the beef is cooked. Set aside till needed.
- 7. Now add the sliced veggies to the skillet and cook until crisp tender. Add additional olive oil if needed.
- 8. Add meat back into skillet with veggies and continue to cook together. Add in the drained sliced mushrooms, stir to blend together.
- 9. Continue cooking meat mixture over low heat, & make a slurry of the reserved mushroom liquid combined with the flour in a small bowl, then pour over the beef mixture, and allow to simmer over low heat. Add in additional beef broth or water if needed to prevent meat from sticking to skillet. adding just enough liquid to make a thin gravy. Serve over cooked rice or noodles. Garnish with chopped green onion tops or chive. ENJOY
