Steps:

  • 1. Heat the oil over medium-high heat in a large pot or Dutch oven. Cook the sausage until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the Cajun seasoning, garlic, peppers and onions and continue to cook until the vegetables are softened, 5 minutes. Add the clam juice, tomatoes and 4 cups water, scraping up any browned bits from the bottom of the pot, and increase the heat to bring to a simmer.
  • 2. Lower the heat slightly and simmer until the stew is thickened and the flavors are melded, about 30 minutes. Gently stir in the fish and shrimp. Cook, making sure the stew is not bubbling vigorously, stirring once or twice, until the shrimp and fish have just turned opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt and serve over rice.

1 tablespoon olive oil
8 ounces smoked andouille sausage, diced (1 1/2 cups)
1/4 cup all-purpose flour
1 teaspoon Cajun seasoning
3 cloves garlic, finely chopped
2 bell peppers, red and/or green, chopped (about 2 1/2 cups)
1 onion, chopped (about 1 1/2 cups)
One 8-ounce bottle clam juice
One 15-ounce can diced tomatoes
1 pound firm white fish, such as halibut, grouper or black sea bass, cut into 1 1/2-inch pieces
1 pound peeled and deveined large shrimp (21 to 25 shrimp)
2 tablespoons chopped fresh parsley leaves
Kosher salt
Cooked white rice, for serving

SPICY RED FISH STEW

This simple and delicious recipe is from Meriel MacDonald of Kinloch Lodge on the Isle of Skye in Scotland. I changed this recipe a little by adding some clam juice because I like it saucier!

Steps:

  • Char bell peppers over flame or in broiler until blackened on all sides.
  • Enclose peppers in paper bag 10 minutes.
  • Peel, seed, and chop peppers.
  • Heat oil in heavy large skillet over medium heat.
  • Add shallots and saute until very soft, about 6 minutes.
  • Stir in peppers, tomatoes with juice, garlic, and crushed red pepper.
  • Simmer 10 minutes to blend flavors.
  • I added the clam juice at this point and brought it back to a simmer.
  • Stir in cilantro and lemon peel.
  • Add fish; simmer until just opaque in center, about 5 minutes.
  • Season stew to taste with salt and pepper.
  • Spoon into bowls and serve.
  • I served it over steamed rice.
  • I love this sauce and I think I'll substitute shrimp next time for fish.

3 large red bell peppers (I used jarred roasted red bell peppers)
5 tablespoons extra virgin olive oil
12 shallots, chopped
2 (14 1/2 ounce) cans chopped tomatoes with juice
2 cloves garlic, minced
3/4 teaspoon dry crushed red pepper (I doubled that)
1/2 cup chopped fresh cilantro
1 teaspoon grated lemon, rind of
2 lbs halibut or 2 lbs cod fish fillets, cut into 1 inch pieces (I used cod)
1 cup clam juice (I added this because I thought it was a little dry) (optional)

SPICY FISH STEW

This is spicy, tasty and easy. Adapted from 'A Spoonful of Ginger', one of my favorite Nina Simonds cookbooks. The original calls for cod, I use orange roughy, and I also cut down the amount of red onions for my family's taste....add more if you like. This is good with steamed rice and crusty bread.

  • Heat 1 tbsp olive oil in 5-quart Dutch oven (like this one) over medium heat. Add onions, celery, and a little salt and pepper (about 1/2 tsp each). Cook, stirring regularly, until softened (about 4 minutes). Add thyme, red pepper flakes and garlic and cook briefly until fragrant (about 30 more seconds).
  • Now, stir in the white wine and reserved tomato juice from can. Bring to a simmer, and cook until the liquid is reduced by about 1/2. Add the tomatoes, vegetable broth, raisins, and capers. Cook for 15-20 minutes over medium heat until flavors combine.
  • Pat the fish dry and season lightly with salt and pepper. Insert the fish pieces into the cooking liquid, and give everything a gentle stir so that the fish pieces are nicely covered in the cooking liquid. Bring to a simmer and cook for another 5 minutes. Remove the Dutch oven from the heat and cover. Let sit off heat for another 4-5 minutes so that the fish will finish cooking. Fish should be flaky when gently pulled apart with a paring knife. Finally, stir in the chopped parsley.
  • Ladle the hot fish stew into serving bowls, top each with a few toasted pine nuts, if you like. Serve with your favorite crusty bread! Enjoy!
