SPICY SAUSAGE CHERRY PEPPERS
Steps:
- Slice off the tops of 12 fresh cherry peppers; remove the seeds. Place the tops and bottoms on a baking sheet, drizzle witholive oil and broil until blistered, about 3 minutes; let cool. Combine 8 ounces Italian turkey sausage (casings removed), 14 cup each ricotta and chopped parsley, 2 tablespoons grated parmesan, 1 teaspoon grated lemon zest, 1 grated garlic clove, 12 teaspoon kosher salt and a few grinds of pepper. Stuff into the peppers and sprinkle with shredded mozzarella. Bake at 425 degrees F until cooked through, 10 to 12 minutes. Cover with the roasted tops.

- Pour brown rice and water into a small saucepan. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer until rice is tender, about 40 minutes.
- Preheat a skillet over medium-high heat. Add turkey sausage, and cook until well browned on the outside, and no longer pink on the inside. Remove cooked sausage, then stir in garlic and onion. Cook for a few minutes until the onion softens and begins to turn translucent. Add green pepper and cook for 2 minutes.
- Pour in half of the vegetable stock along with the tomatoes and pimiento. Season to taste with red pepper flakes, Cajun seasoning, and pepper. Cook until the liquid has almost completely evaporated. Stir in sausage with remaining vegetable broth, and simmer until all is hot. Serve sausage mixture over brown rice.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and crumble. Spread into bottom of baking dish. Sprinkle with Cheddar cheese, Monterey Jack cheese, onion, chile peppers, and jalapeno pepper. In a medium bowl, mix eggs with chili powder, cumin, garlic powder, salt and pepper. Pour over contents of baking dish.
- Bake in preheated oven for 18 to 22 minutes, or until a knife inserted into the center comes out clean. Cool for 10 minutes, then cut into squares.

- Add peppers, olive oil, vinegar, sugar, granulated garlic, salt and pepper to a large skillet and toss to coat. Place the skillet over medium-high heat and saute the peppers until they start to get slightly tender, 3 to 5 minutes. Nestle in the sausages amongst the peppers and lower the heat to low, then cover and gently simmer until the sausages are about 145 degrees F, 5 to 10 minutes.
- Meanwhile, preheat a grill or grill pan over medium-high heat. Remove the sausage from the skillet and grill until charred and the internal temperature reaches 165 degrees F, about 10 minutes. Place back in the skillet with the mini sweet peppers and serve.

- Heat 1 T oil in a 12-inch skillet over med-high heat until just smoking.
- Add sausage and brown well, breaking up large pieces with wooden spoon, about 5 minutes; transfer to slow cooker.
- Pour off all but 2 T fat left in skillet.
- Add onions, garlic, tomato paste, oregano, and red pepper flakes to fat left in skillet and cook over med-high heat until onions are softened and lightly browned, 8-10 minutes.
- Stir in wine, scraping up any browned bits, and simmer until thickened, about 5 minutes; transfer to slow cooker.
- Stir crushed tomatoes, diced tomatoes, and tomato sauce into slow cooker.
- Cover and cook until sauce is deeply flavored, 9-11 hours on LOW for 5-7 hours on HIGH.
- Let sauce settle for 5 minutes, then remove fat from surface using large spoon.
- Microwave bell peppers with remaining tablespoon oil in bowl, stirring occasionally, until tender, about 5 minutes.

SPICY SAUSAGE, PEPPERS AND ONIONS (CROCK POT)
Spicy sausage, pepper and onions. Takes very little prep time and is great for potlucks. Inexpensive and makes alot. Very delicious kids and adults both liked it is very filling. I first took it to a church game night that was just supposed to be snack food but knew I would want something a little more filling than chips had several requests for the recipe. Which made me have to think because when I first made it I used what I had in the house. This is what I remember using. I used Bar-S brand polish sausage which is just a cheap sausage a pack of 3 lbs is about $4 ( found in with the hot dogs in the refrigerated section lunch meats and stuff). Could be used as an entree ( just serve it on a whole bun) snack or starter for a party I think.

- Cut each sausage into bite size pieces (fourths or fifths is what I did).
- Put the peppers, onion, bar-b-que sauce, ketchup, mustard and water in a bowl. Stir together. Pour half of the sauce in a crock pot.
- Add sausages stir
- Add rest of sauce.
- Cook on high at least 3 hrs (longer it cooks the thicker the sauce gets and the better it tastes) stirring about once a hour.
- Cut hot dog buns in half
- Serve mixture on buns and enjoy.

- Heat the olive oil in a large pan to medium heat. Add the Italian sausages and brown them on each side, about 5 minutes, turning occasionally. Remove the sausages and set them aside. Return the pan to medium heat.
- Add the sliced peppers and onions to the pan and cook them down for 10 minutes, stirring occasionally to get all of the peppers. Cook until they begin to soften up. I like to get a bit of a char on them.

- Bring a large pot of salted water to a boil. Add the rigatoni, or pasta of choice, and cook to al dente according to package directions. Reserve 1 cup of starchy pasta water, then drain the pasta & set aside.
- Add the olive oil to a large skillet over medium-high heat. Once hot, add in the sausage, bell pepper & onion, seasoning with 1 teaspoon Kosher salt. Use a wooden spoon to break the sausage into fine bite-sized crumbles as it cooks. The sausage should render & brown nicely & the peppers & onions should soften. If anything starts to brown too quickly, reduce the heat to medium or medium-low. Add in the garlic & crushed red pepper flake, cooking until just fragrant, about 30 seconds to 1 minute.
- Stir the tomato paste into the skillet. As it heats, stir to coat the sausage & veggies. Cook for 1-2 minutes, until deeply red, then deglaze the skillet with the white wine. Increase the heat to medium-high. Once the wine simmers, add in the crused tomatoes & parmesan. Stir to combine, then reduce the heat to medium-low. Let the sauce simmer for 5 minutes to thicken slightly & build flavor.
- Once the sausage & peppers have simmered in the sauce, add the pasta to the skillet. Toss to coat, adding some of the reserved pasta water as needed to loosen up the sauce so it coats the pasta nicely. Let the pasta simmer in the sauce for 1-2 minutes, just to bring everything together, then remove from the heat.
