Spicy Shrimp Stack Recipe - (4.3/5) image

Steps:

  • Cook rice according to directions, omitting oil. When rice is done, add rice vinegar and stir. Spread rice evenly on sheet pan to cool. Cut shrimp into 1" cubes. In another bowl combine cucumber and chives. In another small bowl combine the mayo and sirracha. Makes 4 cups. Using a 1 cup dry measuring cup (sprayed with Pam), layer 1/4 of each: cucumber mixture, avocado, shrimp and rice. Carefully invert on plate. Top with sesame seeds, soy sauce and Sirracha mayo.

1 1/3 cooked short-grain brown rice (1/2 c. uncooked)
2 T. rice vinegar
8 oz cooked shrimp, roast w/ sirracha sauce
1 c. diced English cucumber
1 tsp fresh chives, chpd
1 avocado, mashed w/ a little Lawry's seasoning salt
4 tsp Furikake (or sesame seeds)
soy sauce
1/3 c. mayo and 1-2 T sirracha sauce mixed

Steps:

  • In a 12-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until partially cooked but not crisp; drain. Stir in the butter, seafood seasoning, mustard, chili powder, pepper, hot sauce, basil, oregano and thyme. Cook over low heat for 5 minutes. Add garlic; cook 1 minute longer. Remove from heat and stir in shrimp., Bake, uncovered, at 375° until shrimp turn pink, 20-25 minutes, stirring twice.

Steps:

  • Preheat grill for medium heat.
  • In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
  • Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.

NOTE: I used a 2 cup measuring cup and it was the perfect size for dinner - you can use a 1 cup measuring cup to make 4 stacks that are better suited to be served as an appetizer. Spoon mango salsa into measuring cup until a there is a thin layer, then spread the avocado mixture overtop. Layer with shrimp, then strips of nori, then sticky rice.
  • Press down hard, then trace with a knife all the way around the measuring cup to loosen mixture. Tap on the top of the measuring cup very hard, dumping onto a plate, careful to make sure mixture remains in tact.
